Description

The easiest healthier seasonal snack recipe with a bold pumpkin spice flavor we all crave this time of year! These energy bites are packed with prebiotic-rich nourishing ingredients & take just 10 minutes to make. Gluten-Free, Refined-Sugar-Free, Vegan, Low Sugar, High Fiber, No-Bake.


Ingredients

  • 1/2 cup Green Banana Flour (65g)
  • 1/4 cup Pecans, finely chopped (20g)
  • 1/2 cup Organic Pumpkin Puree (125g)
  • 1/2 cup Creamy Pecan Butter (120g)
  • 1/3 cup Liquid Allulose (95g)
  • 1 1/2 cups Gluten-Free Old Fashioned Oats (150g)
  • 1 tsp Cinnamon 
  • 1 tsp Nutmeg
  • 1/2 tsp Himalayan Pink Salt
  • 1/2 tsp Pure Vanilla Extract
  • (Optional, for decoration) Coconut Butter

Instructions

  1. Prepare a small cookie sheet by lining it with parchment paper and set aside.
  2. Combine all of the ingredients together (besides the optional coconut butter) into the bowl of a 9-qt. food processor. Alternatively, this mixture can be combined by hand in a large mixing bowl. 
  3. Pulse on High for about 45 seconds, until a thick cohesive dough forms. 
  4. Scoop out about 2 tablespoons of the mixture at a time, rolling each ball lightly between the palms of your hands to smooth before placing each one onto the prepared cookie sheet. This recipe should yield about 16 35-gram sized bites. 
  5. Place energy bites in the freezer for 30 minutes to chill. Enjoy cold & store leftovers in the refrigerator!
  6. (Optional) Decorate these energy bites by drizzling each one with melted coconut butter & an extra dash of cinnamon!

Notes

Honey or maple syrup can be substituted for liquid allulose. 

Creamy almond butter, cashew butter, or peanut butter can be substituted for pecan butter, although the flavor may change slightly.
