The month of all things pumpkin spice is finally upon us & these prebiotic pumpkin spice energy bites are one of those must-make snacks I like to have prepped in my fridge. I’m obsessed with this gut-healing, gluten-free, vegan recipe and couldn’t be more excited to get you on board too!
Pumpkin Spice Energy Bites
October should boast pumpkin spice as a synonym in the dictionary because I’m fully convinced that these two nouns go hand-in-hand. We may as well just call the month of October “Pumpkin Spice Month”. With that said, my current snack fixations recently have all been pumpkin spice centered… no surprise there.
Although I have created tons of delicious healthier snack and dessert recipes with the seasonal flavor we all know and love, these prebiotic pumpkin spice energy bites are easily one of my favorites for several reasons.
Reason 1: They are stupid easy to make. Nearly foolproof. Minimal effort. 10 minutes.
Reason 2: These pumpkin spice energy bites have the dreamiest balanced sweet, nutty, warmly spiced flavor that has this snack on my mind daily.
Reason 3: This snack is packed with nourishing ingredients that are sure to keep you feeling full & satisfied.
There’s honestly not much else I want in what I deem to be a “perfect snack”… Dare I say that this prebiotic pumpkin spice energy bites recipe is truly perfect?!
A Prebiotic Pumpkin Spice Snack
I’ve always been one to take gut health very seriously- although not always by choice- even before it became trendy. Now that I have been able to experience first-hand how healing my gut has let me reverse several autoimmune diseases (click HERE to read more on that!), I’m extra excited that prebiotics and probiotics are becoming more mainstream!
With that said, I’ve also been notorious among my friends and family for sneaking in pre/probiotics into recipes at any chance I get. Although there have definitely (I repeat: DEFINITELY) been a few instances where doing so has ruined a recipe, I promise that you won’t even be able to tell that these prebiotic pumpkin spice energy bites are packed with gut healing ingredients!
Green banana flour is one of my favorite sources of prebiotic carbohydrates for that reason. It has a very neutral flavor and fine texture that a lot of other prebiotic fibers don’t have. Green banana flour is especially special for being a potent source of resistant starch type 2. Type 2 resistant starch specifically feeds important bacteria in our gut microbiome that produce anti-inflammatory metabolites. Because these metabolites help reduce symptoms from the chronic inflammation caused by autoimmune flares, I love sneaking this type of prebiotic starch into my diet as much as possible!
Who would’ve thought that my prebiotic punch for the day could come in the most delicious snack?!
Gluten-Free AND Vegan Energy Bites!
It seems as though a good majority of people are looking for healthier options now as we round out 2023. It also seems as though food allergies and personal environmental concerns are becoming increasingly common too.
While subscribing to a certain diet is easy on paper to feel our best, it’s no secret that food has an underlying emotional/social component that we can’t always ignore.
Not only are these prebiotic pumpkin spice energy bites reminiscent of literal oatmeal pumpkin spice cookie dough for the ultimate comforting sweet treat but these energy bites are also one of those recipes that I can feel confident making for any gathering. Making a gluten-free AND vegan recipe for any occasion usually covers 98% of people’s needs!
I’ve always been personally hyper-aware of creating socially-inclusive recipes as well, only because we all know how awkward it is to say “no” to a distant relative’s homemade pie…
What You’ll Need:
- A Small Cookie Sheet
- Parchment Paper
- Organic Pumpkin Puree
- Green Banana Flour
- Pecans
- Pecan Butter (or Almond Butter)
- Allulose (or Honey)
- Gluten-Free Old Fashioned Oats
- Ground Cinnamon
- Ground Nutmeg
- Pure Vanilla Extract
- Himalayan Pink Salt
- (Optional) Coconut Butter
How to Make Prebiotic Pumpkin Spice Energy Bites
Step 1: Prepare a small cookie sheet by lining it with parchment paper and set aside.
Step 2: Combine all of the ingredients (excluding the optional coconut butter) into the bowl of a large food processor. Pulse on High for about 45 seconds, until a thick cohesive mixture forms.
Step 3: Scoop out about 2 tablespoons of the mixture at a time, rolling each bite lightly between the palms of your hands to smooth. There should be about 16 (35g) bites.
Step 4: Freeze for about 30 minutes to chill before serving. Although it’s optional, I love to decorate these energy bites by drizzling each one with melted coconut butter and a dash of extra cinnamon! Enjoy cold.

The easiest healthier seasonal snack recipe with a bold pumpkin spice flavor we all crave this time of year! These energy bites are packed with prebiotic-rich nourishing ingredients & take just 10 minutes to make. Gluten-Free, Refined-Sugar-Free, Vegan, Low Sugar, High Fiber, No-Bake.
Ingredients
- 1/2 cup Green Banana Flour (65g)
- 1/4 cup Pecans, finely chopped (20g)
- 1/2 cup Organic Pumpkin Puree (125g)
- 1/2 cup Creamy Pecan Butter (120g)
- 1/3 cup Liquid Allulose (95g)
- 1 1/2 cups Gluten-Free Old Fashioned Oats (150g)
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 1/2 tsp Himalayan Pink Salt
- 1/2 tsp Pure Vanilla Extract
- (Optional, for decoration) Coconut Butter
Instructions
- Prepare a small cookie sheet by lining it with parchment paper and set aside.
- Combine all of the ingredients together (besides the optional coconut butter) into the bowl of a 9-qt. food processor. Alternatively, this mixture can be combined by hand in a large mixing bowl.
- Pulse on High for about 45 seconds, until a thick cohesive dough forms.
- Scoop out about 2 tablespoons of the mixture at a time, rolling each ball lightly between the palms of your hands to smooth before placing each one onto the prepared cookie sheet. This recipe should yield about 16 35-gram sized bites.
- Place energy bites in the freezer for 30 minutes to chill. Enjoy cold & store leftovers in the refrigerator!
- (Optional) Decorate these energy bites by drizzling each one with melted coconut butter & an extra dash of cinnamon!
Notes
Honey or maple syrup can be substituted for liquid allulose.
Creamy almond butter, cashew butter, or peanut butter can be substituted for pecan butter, although the flavor may change slightly.
