Peanut buttery energy bites with a fun coffee twist… everything I could ever want or need in an afternoon pick-me-up!
A Healthy No-Bake Snack!
These no-bake energy bites are one of my favorite things to have stored in my refrigerator for busy weeks. This healthy snack recipe takes only 5 minutes to make ahead, and they last for months in the freezer! I’m definitely guilty of doubling, tripling, quadrupling the recipe just to have a stash of these convenient little energy bites on hand for several weeks.
This healthy no-bake snack recipe is also mostly SCD-friendly- besides the unsweetened dark chocolate drizzle. However, if you drizzle these with coconut butter, honey, or simply just leave them plain these energy bites are compliant with the Specific Carbohydrate Diet (SCD).
I’ve been following the SCD closely for about 2 years. As long as I don’t have any ulcerative colitis symptoms, I’ve been able to experiment with what I can add back in that isn’t “legal” on the SCD. Most of these foods are still very natural minimally-processed ingredients. One of which being unsweetened chocolate, thank goodness!
Why Collagen?
Collagen is one of my favorite proteins to add to recipes because
- It doesn’t taste like anything. I promise!
- It doesn’t change the texture.
- It has sooo many health benefits.
The amount of collagen protein powders on the market right now is… a lot! It’s overwhelming in the best way possible. I think it’s actually super cool that more companies in the industry are getting behind the recent popularity of collagen.
Collagen is a natural fibrous protein in animals (including humans). There are 3 different types of collagen, but the most common “type” is the one that makes up our skin, tendons, ligaments, bones, skin, and blood vessels. Although it’s not considered an essential protein since we have the ability to synthesize it ourselves, adding more of it in your diet will help support your health in SO many ways since collagen plays so many important roles in our overall well-being.
All of the collagen powders that I’ve seen have been hydrolyzed into smaller peptides since a molecule of collagen is very large and insoluble in its native form. In other words, since the protein is already partially broken down to be soluble, collagen peptide powders can be added to recipes easily.
As far as health benefits of collagen goes, my favorite is that it helps support a healthy gut. Since so much of our intestinal gut lining is made of collagen, adding it into your diet will help maintain a strong “wall”. AKA: help with “leaky gut” symptoms.
Collagen is also known to improve skin, reduce wrinkles, and prevent bone loss as we get older.
Peanut Butter & Coffee?
Two of my favorite things in the whole world.
Although I highly highly recommend the peanut butter & coffee combo, there are tons of other nut butters that can be subbed for peanut butter. A few of my favorites include:
All of these nut butters pair super well with the espresso powder in this recipe! I’ve grown up being a peanut butter lover, so I’m slightly biased towards pb. Especially in the morning, peanut butter toast with a warm mug of coffee is a nostalgic flavor combination for me!
How to Make Wired Energy Bites
Step 1: Combine all of the ingredients together in a mixing bowl and mix well. The dough should be thick but smooth.
Step 2: Roll the dough into 12 evenly sized balls with a tablespoon.
Step 3: Melt the paleo chocolate chips with coconut oil in the microwave, stirring well every 45 seconds. Drizzle the chocolate over the energy bites and freeze them for about 30 minutes before serving.
I store the energy bites in the refrigerator so they’re ready to eat, but if you want them to last longer I would recommend the freezer. It takes about 5 minutes to thaw at room temperature.

Description
An easy healthier no-bake snack! Peanut buttery energy bites filled with healthy fats, protein, and a subtle hit of caffeine for a long lasting energy boost. Grain-free, Gluten-free, dairy-free, refined-sugar-free, low carb, SCD-friendly.
Ingredients
Energy Bites:
- 1/2 cup natural peanut butter
- 2 tbsp coconut flour
- 1 tbsp honey
- 1/4 cup collagen peptides
- 2 tsp. espresso powder
- 1/2 tsp vanilla extract
Chocolate drizzle:
- 1/4 cup paleo chocolate chips
- 1/2 tbsp coconut oil
Instructions
- Combine all of the “energy bites” ingredients in a mixing bowl. Stir well until a thick dough forms.
- Scoop out 12 evenly-sized balls of dough with a tablespoon. Roll each ball lightly between the palms of your hands to smooth.
- In a microwave-safe bowl, microwave the chocolate chips with the coconut oil until melted (about 70-80 seconds). Stir halfway through. Drizzle the melted chocolate over the energy bites.
- Place the energy bites in the freezer for about 30 minutes before serving for the best texture.
