Paleo Twix Cookies
Twix candy bars are one of my absolute favorites. Chocolate, caramel, and a buttery shortbread cookie is a dangerously addictive trio that I just can’t get enough of! Even when I switched to a Paleo-style diet to manage several autoimmune diseases, I was still determined to satisfy my Twix cravings when they hit.
I was initially highly skeptical of paleo cookies in general when I first started eating more Paleo based foods 3 years ago. I’ve always assumed that any cookies made with almond flour and without traditional sugar would be gritty and bland, but OH MAN was I wrong! These Paleo Twix Cookies are sweet, soft, and buttery. Especially filled with a healthier paleo caramel and drizzled with dark chocolate, these paleo cookies are nearly irresistible!
Baking with Liquid Allulose
I’ve always made my Paleo shortbread cookies with honey or maple syrup in the past. Liquid sweeteners seemed to work best to reduce the “gritty” texture some nut flours can have in cookies. Honey/maple syrup also seemed to trap in moisture the best to keep the cookies soft and buttery, even after several days!
However, I’ve been curious about how the natural non-nutritive sweetener, allulose, would work in my cookie recipe for a long time! Allulose is a paleo/keto-friendly zero sugar sweetener that is naturally found in foods like jackfruit, raisins, and figs. Allulose also doesn’t have any of the negative effects that a sugar alcohol would since it is a naturally occurring monosaccharide.
Baking with Date Syrup
Date syrup has become one of my new baking staples. It has a deep, molasses-type of a flavor that I just can’t seem to get in recipes from honey or maple syrup!
Date syrup is very dark in color, though. So for shortbread/sugar cookies I still lean towards lighter liquid sweetener options such as honey or maple syrup. However, for the caramel sauce, it worked PERFECTLY. Not only did replacing the honey with date syrup in that recipe give the caramel a fuller flavor, but it also helped give the paleo caramel a more caramel-like golden brown color.
Date syrup is also incredibly sustainable. Most of the companies that I’ve found that produce date syrup use the “imperfect” dates that wouldn’t otherwise be sold in grocery stores and thrown out.
What You’ll Need
- Electric Hand Mixer
- Cookie Sheet
- Almond Flour
- Coconut Oil
- Liquid Allulose
- Cashew Butter
- Date Syrup
- 100% Dark Chocolate
- Sea Salt
How to Make Twix Thumbprint Cookies
Step 1: Preheat the oven to 350F and prepare a cookie sheet by either lining it with parchment paper or lightly greasing it with coconut oil.
Step 2: Whisk the dry ingredients together in a large mixing bowl. Beat in the egg, melted coconut oil, liquid allulose, and vanilla until a thick cookie dough forms.
Step 3: Scoop out evenly-sized balls of cookie dough using a 1tbsp measuring spoon. Roll lightly between the palms of your hands and press down the center of each cookie dough ball with your thumb to make a slight indent in the center. Place in the freezer to chill while you make the paleo caramel.
Step 4: Make the paleo caramel (recipe linked HERE). Let cool for about 5 minutes to room temperature.
Step 5: Fill the indent in each cookie dough ball with about 1 tsp. of the caramel sauce. Bake the cookies for 10-12 minutes, until the bottoms are slightly golden-brown.
Step 6: Drizzle the baked cookies with melted 100% dark chocolate and top with flakey sea salt.

Ingredients
Shortbread Cookie:
- 1 3/4 cups almond flour
- 1/4 c coconut flour
- 1/2 tsp. baking powder
- 1/4 tsp. sea salt
- 1 egg, room temp
- 1/3 cup coconut oil, melted
- 1/4 cup allulose (see notes for alternatives)
- 1 tsp. pure vanilla extract
Paleo Caramel Sauce
- 1/3 cup cashew butter
- 1/3 cup date syrup (see notes for alternatives)
- 1/4 cup coconut oil
Chocolate Drizzle
- 50 grams 100% dark chocolate
- 1 tsp. coconut oil
Instructions
- Preheat the oven to 350F and prepare a baking sheet by either lining it with parchment paper OR lightly greasing it with coconut oil.
- In a large mixing bowl, whisk the almond flour, coconut flour, baking powder, and sea salt together. Beat in the rest of the cookie ingredients until a thick cookie dough forms.
- Scoop out evenly sized balls of cookie dough using a 1 tbsp. measuring spoon. Roll each one between the palms of your hands and lightly press your thumb in the center to create a small indentation. Place in the freezer to chill while you make the paleo caramel.
- Make the paleo caramel sauce (recipe linked HERE). Let cool for about 5 minutes, until it is around room temperature.
- Fill the center of each cookie dough ball with about 1 tsp. of the caramel sauce.
- Bake for 10-12 minutes, or until the bottoms of the cookies are slightly golden-brown.
- Melt the 100% dark chocolate with the coconut oil in a small stovetop pan or in the microwave and drizzle over the baked cookies. Top with flakey sea salt and enjoy!
Notes
