Toasted Almond Sugar Cookies (Paleo, GF)

Description

Ultra fluffy, perfectly soft paleo sugar cookies with a warm toasted almond flavor perfect for the holidays! Paleo, Grain-Free, Gluten-Free, Refined-Sugar-Free, Dairy-Free. 


Ingredients

  • 1 1/4 cups almond flour
  • 2 tbsp. monk fruit sweetener
  • 1 tsp. baking powder
  • 1/2 tsp. nutmeg
  • 1/4 tsp. sea salt
  • 2 tbsp honey 
  • 1 egg
  • 1 tbsp. creamy cashew butter
  • 1 tbsp. coconut oil, melted
  • 1/2 tsp. pure vanilla extract
  • 1/2 tsp. almond extract

Instructions

  1. Preheat the oven to 350F and prepare a baking sheet by lightly spraying it with coconut oil cooking spray. 
  2. Toast the slivered almonds in a cast iron skillet over medium-high heat for about 3 minutes and set aside. 
  3. In a medium-sized mixing bowl, combine all of the dry ingredients and stir well. 
  4. Add in the honey, egg, cashew butter, coconut oil, vanilla, and almond extract and beat with an electric hand mixer until a thick cookie dough forms. 
  5. Use a 2tbsp. to scoop out evenly-sized balls of cookie dough and place them on the prepared baking sheet, about 3 inches apart. 
  6. Top each cookie dough ball with 3 toasted almond pieces (or more if you’d like!) and bake for 10-12 minutes until the bottoms are slightly golden-brown.
