Ultra fluffy, perfectly soft paleo sugar cookies with a warm toasted almond flavor perfect for the holidays! Paleo, Grain-Free, Gluten-Free, Refined-Sugar-Free, Dairy-Free.
Ingredients
- 1 1/4 cups almond flour
- 2 tbsp. monk fruit sweetener
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
- 1/4 tsp. sea salt
- 2 tbsp honey
- 1 egg
- 1 tbsp. creamy cashew butter
- 1 tbsp. coconut oil, melted
- 1/2 tsp. pure vanilla extract
- 1/2 tsp. almond extract
Instructions
- Preheat the oven to 350F and prepare a baking sheet by lightly spraying it with coconut oil cooking spray.
- Toast the slivered almonds in a cast iron skillet over medium-high heat for about 3 minutes and set aside.
- In a medium-sized mixing bowl, combine all of the dry ingredients and stir well.
- Add in the honey, egg, cashew butter, coconut oil, vanilla, and almond extract and beat with an electric hand mixer until a thick cookie dough forms.
- Use a 2tbsp. to scoop out evenly-sized balls of cookie dough and place them on the prepared baking sheet, about 3 inches apart.
- Top each cookie dough ball with 3 toasted almond pieces (or more if you’d like!) and bake for 10-12 minutes until the bottoms are slightly golden-brown.
