Paleo Sugar Cookies
Warm, toasted almonds and the holidays go hand-in-hand as far as I’m concerned. And I wasn’t about to let that go when I started following a Paleo based diet to manage IBD symptoms! Making a healthier paleo sugar cookie recipe that tastes just as good as the “real deal” became my mission over the past few years. Not to jump the gun here, but I’m pretty sure these toasted almond sugar cookies cannot be beat!
This cookie recipe is also SO easy to make and made with simple, natural ingredients. Traditional sugar cookies are also very simple, but these are *knock on wood* foolproof! Using a paleo nut flour that doesn’t have gluten makes it impossible to over-mix or dry out over time since the healthy fat content in almond flour keeps it so moist.
To give these paleo sugar cookies the perfect “toasted almond” flavor, pre-roasting the almonds on a stovetop cast iron pan and a little hint of warm nutmeg are key. Paired with the subtle deep flavor note from pure almond extract, these paleo toasted almond sugar cookies are easily one of my favorites. Sometimes simple truly is best.
Paleo Baking Tips
Even though I’m not a certified paleo baking professional, I’ve learned my fair share of lessons over the past 3 years!
To begin, I’ve found that using a blend of different paleo flour alternatives almost always works better than just one. The only exception to this that comes to mind immediately is this simple sugar cookie recipe. Using almond flour alone here really brings out all of the almond flavor since you don’t have to add a ton of additional “wet” ingredients with almond flour.
Other paleo/gluten-free, non-traditional flours like coconut flour, tapioca flour, green banana flour, etc. all tend to soak up a lot of liquid due to their high fiber content. While this is a good thing in most cases to avoid an overall “nutty” flavor, this toasted almond sugar cookie recipe actually really benefits from it!
The other important paleo baking tips that should be mentioned (especially for cookies!) would be to not shy away from eggs, nut butters, and coconut oil as easy paleo approved replacements for corn starch, butter, and cream in traditional recipes. A lot of these ingredients can be swapped one-for-one, and in most cases this can be easily confirmed by a quick google search since the better-for-you style of baking keeps increasing in popularity!

- Electric Hand Mixer
- Cookie Sheet
- Coconut oil non-stick spray
- Almond Flour
- Monk Fruit
- Honey
- Coconut OIl
- Nutmeg
- Slivered Almonds
How to Make Toasted Almond Cookies
Step 1: Preheat the oven to 350F and prepare a cookie sheet by lightly spraying it with non-stick coconut oil spray. Toast about 2 tbsp of slivered almonds on a cast iron over medium heat stirring frequently for about 3 minutes. In a medium-sized mixing bowl, combine the almond flour, baking powder, monk fruit, sea salt, and nutmeg and stir well until mixed.
Step 2: Add in the egg, honey, melted coconut oil, cashew butter, pure vanilla extract, and almond extract and beat well until a thick cookie dough forms.
Step 3: Use a 2tbsp measuring spoon to scoop out 10 evenly-sized balls of dough. Place them about 3 inches apart on the prepared baking sheet. Top each cookie dough ball with 3 toasted almond pieces (or however many you’d like!).
Step 4: Bake for 10-12 minutes, or until the edges are slightly golden-brown & enjoy!

- 1 1/4 cups almond flour
- 2 tbsp. monk fruit sweetener
- 1 tsp. baking powder
- 1/2 tsp. nutmeg

- 1/2 tsp. pure vanilla extract
- 1/2 tsp. almond extract
Instructions

- Use a 2tbsp. to scoop out evenly-sized balls of cookie dough and place them on the prepared baking sheet, about 3 inches apart.
- Top each cookie dough ball with 3 toasted almond pieces (or more if you’d like!) and bake for 10-12 minutes until the bottoms are slightly golden-brown.
