A Healthier Breakfast Recipe

Weekend breakfasts are one of those things that you want to romanticize, but don’t want to put a lot of effort into. At least that’s how it works in my world! Especially since I’m in the post-grad era of living alone, cooking for one I always find myself leaning towards the same easy, single-serve recipes that don’t leave me with a ton of leftovers to store.

I’m also a sucker for a sweet breakfast. The only downside: most sweet breakfasts have me immediately hungry 2 hours later.

With that said, this healthier breakfast recipe is a game changer. These single-serve strawberry rolls are gluten-free, refined-sugar-free, and packed with protein and healthy fats to keep me full for hours. Even better: they still have the sweet swirl and gooey center that I crave in a good “cinnamon roll” recipe.

Some of the healthier ingredient swaps in this recipe include plain, unsweetened Greek yogurt (high protein), almond flour (healthy fats), and strawberries (polyphenols and fiber). I also used monk fruit instead of traditional sugar in this recipe to keep those unwanted blood sugar crashes away.

Air Fryer Single-Serve Strawberry Rolls

Although you can totally make these single-serve strawberry rolls in the oven, the air fryer is my favorite way to bake them! Air frying the strawberry rolls in ramekins gives these the perfect golden-brown edges and a gooey center that I just can’t seem to replicate in the oven.

I also love using my air fryer for small batch baking in the summer since it doesn’t heat up my small apartment!

Gluten-Free, Refined-Sugar-Free Baking

I have the biggest sweet tooth EVER so when I had to start eating a Paleo-style diet to manage a few autoimmune diseases, it was only a matter of time before I got desperate enough to figure out how to recreate all of my old favorite sweet treats with gluten-free, refined-sugar-free ingredients.

Although gluten-free, refined-sugar-free baking often gets a bad rap, if you do it right these healthier treats can be almost as delicious as the traditional version!

A few of my favorite ingredients to prevent a dry, chalky single-serve strawberry rolls include a mix of different grain free flours (primarily almond flour though!) and unsweetened greek yogurt. The combination of healthy fats and creamy high-protein yogurt work magic in trapping in moisture while still letting the strawberry rolls to rise. A lot of gluten-free or nut-based flour alternatives can easily result in a dense, heavy final product which isn’t always exactly what you’re looking for in a soft strawberry roll!

Gluten-free, refined-sugar-free baking is also incredible when it comes to curbing cravings and blood sugar crashes. These healthier single-serve strawberry rolls keep me full and energized for hours. Simply replacing sugar with granulated monk fruit makes such a big difference and I promise you won’t even be able to tell the difference!

Unlike a lot of other sugar-replacements, monk fruit has a very clean aftertaste and doesn’t cause bloating like sugar alcohols do. Long story short, the only source of sugar in this recipe comes naturally from strawberries!

What You’ll Need

  • Air Fryer
  • Mini Oven-Safe Ramekins
  • Coconut Oil Cooking Spray
  • Almond Flour
  • Coconut Flour
  • Tapioca Flour
  • Granulated Monk Fruit
  • Baking powder
  • Unsweetened Greek Yogurt
  • Pure Vanilla Extract
  • No-Sugar-Added Strawberry Preserves
  • Cinnamon

How to Make Single-Serve Strawberry Rolls

Step 1: Prepare 2 mini ramekins by spraying them with non-stick cooking spray and set aside. Combine the almond flour, coconut flour, tapioca flour, cinnamon, baking powder, and salt in a small mixing bowl.

Step 2: Add the greek yogurt and vanilla extract to the flour mixture. Stir well until a thick dough forms.

Step 3: Lay out a sheet of parchment paper on a flat countertop, spraying it lightly with coconut oil cooking spray. Transfer the dough mixture to the parchment paper and form it into a smooth ball before pressing it into a rectangle about 3 inches wide.

Step 4: Spread the strawberry preserves evenly over the surface of the rectangle of dough, leaving about 1/4 inch of room on each edge. Starting with the short side of the rectangle, use the parchment paper as a guide to roll the dough over itself.

Step 5: Cut the rolled dough “log” in half, placing each half in one of the prepared ramekins.

Step 6: Place the ramekins in the basket of an air fryer and bake at 350F for 25 minutes, or until the edges of the strawberry rolls look slightly golden-brown. Let them cool for about 5 minutes before carefully flipping out of the ramekins.

Step 7: Drizzle with melted coconut butter and chopped pistachios and enjoy warm!

Easy single-serve strawberry “cinnamon” rolls with the perfect gooey center and a sweet strawberry swirl encased in a lightly cinnamon spiced gluten-free, refined-sugar-free dough- ready in just 25 minutes! Grain-Free, Gluten-Free, Refined-Sugar-Free. 


Ingredients

  • 1/4 cup almond flour
  • 1 tbsp. coconut flour
  • 1 tbsp. tapioca flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/4 cup unsweetened Greek yogurt
  • 2 tbsp. no-sugar-added strawberry preserves 
  • 1/2 tsp. pure vanilla extract
  • (optional) 2 tbsp coconut butter
  • (optional) 2 tbsp chopped pistachios 

Instructions

  1. Preheat the oven to 350F and prepare 2 mini 6oz. ramekins by spraying them lightly with coconut oil cooking spray.
  2. Combine the almond flour, coconut flour, tapioca flour, cinnamon, baking powder, and sea salt in a small mixing bowl. Mix well. 
  3. Add the unsweetened Greek yogurt and vanilla extract. Stir well until a thick dough forms. 
  4. Prepare a rectangular sheet of parchment paper on a flat surface by lightly spraying it with coconut oil cooking spray. Transfer the dough to the sheet of parchment paper, rolling it out evenly into a rectangle shape about 2.5 inches wide. 
  5. Spread the strawberry preserves evenly over the surface of the dough, leaving about 1/4 inch space around the perimeter. 
  6. Use the parchment paper as a guide to carefully roll the dough over itself starting with the short side of the rectangle dough. 
  7. Cut the spiraled log of dough in half, placing each half in one of the prepared ramekins. Bake for 25-28 minutes, until the edges are slightly golden-brown. 
  8. Let the strawberry rolls cool for about 5 minutes before carefully turning them out of the ramekins. Drizzle with melted coconut butter “glaze” and garnish with chopped pistachios.
