A perfectly soft, delicious single-serve paleo chocolate birthday cake cookie recipe that I look forward to constantly! Fresh out of the oven every time, ready in under 20 minutes, and made with nourishing ingredients. Paleo, Keto-Friendly, Refined-Sugar-Free, Gluten-Free, Grain-Free, & Vegan.
Ingredients
- 2 tbsp. almond flour
- 1 tbsp. coconut flour
- 1/2 tbsp. unsweetened cocoa powder
- 2 tsp. granulated monk fruit sweetener
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. sea salt
- 1 tbsp. creamy cashew butter
- 1 tbsp. coconut butter
- 2 tbsp. almond milk
- 1/2 tsp. pure vanilla extract
- 1/8 tsp. almond extract
- 2 tsp. paleo, keto-friendly sprinkles
Instructions
- Preheat the oven to 350F. Prepare a mini 3.5″ cast iron skillet (or small cookie sheet) by lightly spraying it with coconut oil cooking spray. Set aside.
- Combine the almond flour, coconut flour, cocoa powder, monk fruit, baking powder, baking soda, and sea salt in a small mixing bowl. Stir well.
- Add the pecan butter, coconut butter, almond milk, vanilla, and almond extract to the dry ingredients. Mix well until a cohesive, thick cookie dough forms. Fold in the rainbow sprinkles.
- Form the mixture into one large cookie with your hands. Transfer the shaped cookie dough on to the prepared skillet or baking sheet.
- Bake for 15 minutes and enjoy!
Notes
Although the taste and color may be different, creamy almond butter is great substitutes for cashew or coconut butter if needed!
