This single-single serve paleo chocolate birthday cake cookie is truly the perfect dessert, all for you! It can be for one or to make multiple to share with friends of course. Since I started grad school, I’ve lived with roommates and cooked for myself with limited space to store leftover food. Cue all the fun single-serve recipes!

Fun fact: I also despise leftovers. I love recipes that make the perfect amount for what I need! Single-serve recipes also help me massively reduce the amount of food that can easily be wasted accidentally just from cooking for one instead of many.

Sometimes I’m the wildest chocoholic and other times I would do anything for a sweet vanilla dessert or a warm buttery cinnamon treat. The Best Paleo Cookie Recipe
I’ll take a really incredible cookie over most other desserts if I’m totally honest with myself. There’s just something about a cookie’s soft, moist center and crispy buttery edges that does it all for me. Cookies are also a dessert that lends itself very easily to being made with paleo ingredients.

Paleo ingredients such as almond flour, pecan butter, and monk fruit are naturally more dense and a little heavier than traditional wheat flour with gluten, refined sugar, and butter. More than any other dessert, cookies actually benefit from being rich, dense, and gooey! It’s much harder to make a paleo cake, ice cream, or fluffy bread with the same texture and flavor as the non-paleo version.
I also call this “the best paleo cookie recipe” because it’s ready in less than 20 minutes. Delicious, easy, healthy; how could it get more perfect?!
Chocolate Birthday Cake Cookie
I know what it looks like: I threw some sprinkles in a chocolate cookie and called it a chocolate birthday cake cookie. Although that is partially true, I did add in some ingredients that gives this paleo chocolate birthday cake cookie recipe the “birthday cake” punch.
Mixing pure vanilla extract mixed with a tiny bit of almond extract gives these cookies a cake-like flavor. The slightly sweet, buttery coconut butter in this recipe also infuses an essence of buttercream frosting that makes a birthday cake a birthday cake. And of course, the sprinkles are absolutely not optional in any birthday cake flavored dessert! One of my favorite things about living in 2023 is that keto, paleo-friendly rainbow sprinkles exist and I plan to take full advantage!

- Coconut Oil Non-stick Cooking Spray
- Almond Flour
- Coconut Flour
- Coconut Butter
- Pecan Butter
- Granulated Monk Fruit Sweetener
- Pure Vanilla Extract
- Pure Almond Extract
- Sea Salt

How to Make Single-Serve Paleo Cookies
Step 1: Preheat the oven and prepare a small 3.5″ cast iron skillet (or small baking sheet) by lightly spraying it with coconut oil cooking spray. Set aside.
Step 2: Mix all of the dry ingredients together in a small mixing bowl. Then add the coconut butter, pecan butter, almond milk, vanilla extract, and almond extract.

Step 3: Stir well until a thick cookie dough forms. Fold in the rainbow sprinkles and shape the dough into one large cookie with your hands. Transfer to the prepared skillet or baking sheet.


Step 4: Bake for 15 minutes and enjoy!

- 2 tbsp. almond flour

- 1/2 tbsp. unsweetened cocoa powder
- 2 tsp. granulated monk fruit sweetener
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. sea salt
- 1 tbsp. creamy cashew butter
- 1 tbsp. coconut butter
- 2 tbsp. almond milk
- 1/2 tsp. pure vanilla extract
- 1/8 tsp. almond extract
- 2 tsp. paleo, keto-friendly sprinkles
Instructions
- Preheat the oven to 350F. Prepare a mini 3.5″ cast iron skillet (or small cookie sheet) by lightly spraying it with coconut oil cooking spray. Set aside.
- Combine the almond flour, coconut flour, cocoa powder, monk fruit, baking powder, baking soda, and sea salt in a small mixing bowl. Stir well.
- Add the pecan butter, coconut butter, almond milk, vanilla, and almond extract to the dry ingredients. Mix well until a cohesive, thick cookie dough forms. Fold in the rainbow sprinkles.
- Form the mixture into one large cookie with your hands. Transfer the shaped cookie dough on to the prepared skillet or baking sheet.
- Bake for 15 minutes and enjoy!
Notes
Although the taste and color may be different, creamy almond butter is great substitutes for cashew or coconut butter if needed!
