Description
A key lime pie recipe that you can feel good about eating by yourself! Grain-free, scd-friendly, gluten-free, and made with wholesome healthy ingredients.
Ingredients
Crust
- 1/4 cup + 1tbsp. pecan flour
- 1/2 tbsp. melted coconut oil
- 1 1/2 tbsp. liquid egg whites
- 1/4tsp. vanilla extract
- 1/8tsp. salt
Filling
- 1/3 cup plain greek yogurt
- 1 egg yolk
- 1/2tsp. key lime zest
- 1tsp. key lime juice
- 1/2tbsp. honey
Instructions
- Preheat the oven to 350F.
- Start with the crust: stir together all of the ingredients for the crust until well-combined.
- Press evenly into a 3.5″ mini cast iron skillet.
- Bake for 7 minutes.
- Whisk together the egg yolk and lime zest.
- Add in the greek yogurt, lime juice, and honey and continue to whisk until well-combined.
- Pour the filling into the baked crust.
- Bake for 20 minutes or until the filling is set.
- Refrigerate for 1 hour before serving.
Notes
I highly recommend topping it with more greek yogurt, coconut cream, or other whipped cream of your choice!
The pecan flour can be replaced for almond flour.
The coconut oil can be replaced with butter.
