single-serve key lime pie

It’s no secret: pies are notoriously hard to make. They’re one of those things that my family would only have for special occasions… a true labor of love. It’s also no secret that I have absolutely no patience when it comes to desserts! SO I took it upon myself to make this single-serve key lime pie recipe to be easy, healthy, tart, coconutty… everything you need to satisfy a pie craving!

I’ve been so thrilled to share this recipe! The custard-like filling only requires 4 healthy ingredients that you simply have to whisk together before pouring into the buttery homemade pecan crust… OK YUM.

Finding easy desserts to make that follow the specific carbohydrate diet has required a LOT of creativity in the kitchen, but its been so much fun experimenting & finding some fun, wholesome alternatives that make me feel good! Goodbye sugar crashes and stomach aches!

I also always seem to be craving something different every day, so not having any leftovers that I “HAVE” to finish is a major bonus to my fun single-serve creations! Single-serve recipes are especially great when I’m living on my own in my college apartment where I don’t have much refrigerator space for leftover sweets.

You can probably find me making this on repeat all summer!

Step 1: Combine the pecan flour, coconut oil, egg whites, vanilla, and salt.

Step 2: Press into a mini cast iron skillet and bake.

Step 3: Whisk together an egg yolk with the lime zest.

Step 4: Add in the greek yogurt, honey, and lime juice & whisk.

Step 5: Pour the mixture into the crust and bake!

Description

A key lime pie recipe that you can feel good about eating by yourself! Grain-free, scd-friendly, gluten-free, and made with wholesome healthy ingredients. 


Ingredients

Scale

Crust

  • 1/4 cup + 1tbsp. pecan flour 
  • 1/2 tbsp. melted coconut oil
  • 1 1/2 tbsp. liquid egg whites
  • 1/4tsp. vanilla extract
  • 1/8tsp. salt

 

Filling

  • 1/3 cup plain greek yogurt
  • 1 egg yolk
  • 1/2tsp. key lime zest
  • 1tsp. key lime juice
  • 1/2tbsp. honey

Instructions

  1. Preheat the oven to 350F.
  2. Start with the crust: stir together all of the ingredients for the crust until well-combined.
  3. Press evenly into a 3.5″ mini cast iron skillet.
  4. Bake for 7 minutes. 
  5. Whisk together the egg yolk and lime zest. 
  6. Add in the greek yogurt, lime juice, and honey and continue to whisk until well-combined. 
  7. Pour the filling into the baked crust.
  8. Bake for 20 minutes or until the filling is set. 
  9. Refrigerate for 1 hour before serving.

Notes

I highly recommend topping it with more greek yogurt, coconut cream, or other whipped cream of your choice!

The pecan flour can be replaced for almond flour.

The coconut oil can be replaced with butter.
