Ingredients

Scale
  • 2.5 tbsp. almond flour
  • 1 tbsp. coconut flour
  • 2 tsp. granulated monk fruit
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/8 tsp. nutmeg
  • 1/8 tsp. salt
  • 1 tbsp. melted coconut butter
  • 1 tbsp. cashew butter
  • 2 tbsp. unsweetened almond milk
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. almond extract

Optional Topping: 

  • 1 tbsp. melted coconut butter
  • 1 tsp. natural sugar-free sprinkles

Instructions

  1. Preheat the oven to 350F and place a small square of parchment paper on a cookie sheet.
  2. Mix the almond flour, coconut flour, monk fruit, baking powder, baking soda, nutmeg, and salt together in a small bowl. 
  3. Add in the coconut butter, cashew butter, almond milk, vanilla/almond extracts. Stir well until a thick cookie dough forms.
  4. Roll the cookie dough into a giant ball and place on the square of parchment paper. Use your hands to flatten the dough to be about a half inch thick. 
  5. Bake for 15 minutes, until the edges are slightly golden-brown and the top is slightly cracked. Let cool for about 5 minutes before topping with 1 tbsp. melted coconut butter and natural sugar-free sprinkles.
