Ingredients
- 2.5 tbsp. almond flour
- 1 tbsp. coconut flour
- 2 tsp. granulated monk fruit
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. nutmeg
- 1/8 tsp. salt
- 1 tbsp. melted coconut butter
- 1 tbsp. cashew butter
- 2 tbsp. unsweetened almond milk
- 1/4 tsp. vanilla extract
- 1/4 tsp. almond extract
Optional Topping:
- 1 tbsp. melted coconut butter
- 1 tsp. natural sugar-free sprinkles
Instructions
- Preheat the oven to 350F and place a small square of parchment paper on a cookie sheet.
- Mix the almond flour, coconut flour, monk fruit, baking powder, baking soda, nutmeg, and salt together in a small bowl.
- Add in the coconut butter, cashew butter, almond milk, vanilla/almond extracts. Stir well until a thick cookie dough forms.
- Roll the cookie dough into a giant ball and place on the square of parchment paper. Use your hands to flatten the dough to be about a half inch thick.
- Bake for 15 minutes, until the edges are slightly golden-brown and the top is slightly cracked. Let cool for about 5 minutes before topping with 1 tbsp. melted coconut butter and natural sugar-free sprinkles.
