A Healthier Single-Serve Recipe
I love having lots of healthier single-serve recipes archived for many reasons. Since I live alone, I love single-serve recipes for nights when I want a homemade cookie without taking the time to make a whole batch just for myself. Single-serve recipes are also perfect whether or not you live alone so you can make just as many as you need without having to worry about storing or freezing leftovers.
There’s also just something so fun and indulgent about having a giant bakery-style cookie all you yourself! Plus, since this cookie recipe is make with paleo-based, nourishing ingredients, I also feel good after eating it too. This healthier single-serve iced sugar cookie recipe truly takes self care to a whole new level.
Baking with Monk Fruit
Monk fruit is one of my absolute favorite sugar-free, low GI sweeteners to use for baking. It’s 200 times sweeter than table sugar, so I don’t have to use as much in baking. Monk fruit also doesn’t cause bloating or digestive issues like other non-nutritive sweeteners like sugar alcohols. Some studies even show that the compounds extracted from monk fruit (mongrosides) are actually anti-inflammatory!
Monk fruit itself is a melon-like fruit from southern China. Monk fruit is surprisingly in the same family as the guards and squash found here in North America. In order to isolate and extract the sweet compounds from monk fruit, the fruit is crushed to release the juice. The monk fruit juice is then mixed with hot water, filtered, and dried to obtain the granulated powder (monk fruit “sugar”).
Even though monk fruit isn’t a direct substitute for sugar, it’s definitely worth the slight trial-and-error process to make the switch in my opinion! You don’t have to use as much monk fruit as you do sugar in a recipe, so it can effect the final volume and texture of whatever you’re baking.

How to Make a Single-Serve Cookie
Step 1: Pre-heat the oven & mix the dry ingredients together in a small bowl.
Step 2: Add in the coconut butter, cashew butter, vanilla/almond extracts, and almond milk and stir until a thick cookie dough forms.
Step 3: Roll into a giant ball and bake for 15 minutes. Let cool for about 5 minutes & top with melted coconut butter & natural sprinkles.

Ingredients
- 2.5 tbsp. almond flour
- 1 tbsp. coconut flour
- 2 tsp. granulated monk fruit
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. nutmeg
- 1/8 tsp. salt
- 1 tbsp. melted coconut butter
- 1 tbsp. cashew butter
- 2 tbsp. unsweetened almond milk
- 1/4 tsp. vanilla extract
- 1/4 tsp. almond extract
Optional Topping:
- 1 tbsp. melted coconut butter
- 1 tsp. natural sugar-free sprinkles
Instructions
- Preheat the oven to 350F and place a small square of parchment paper on a cookie sheet.
- Mix the almond flour, coconut flour, monk fruit, baking powder, baking soda, nutmeg, and salt together in a small bowl.
- Add in the coconut butter, cashew butter, almond milk, vanilla/almond extracts. Stir well until a thick cookie dough forms.
- Roll the cookie dough into a giant ball and place on the square of parchment paper. Use your hands to flatten the dough to be about a half inch thick.
- Bake for 15 minutes, until the edges are slightly golden-brown and the top is slightly cracked. Let cool for about 5 minutes before topping with 1 tbsp. melted coconut butter and natural sugar-free sprinkles.
