The Easiest Single-Serve Bagel Recipe!
I’ve been a runner since I was 8 years old, so carbs have always had a steadfast presence in my diet. I’m sure my other endurance athletes out there can relate. For some people it’s cheese and Chick-Fil-A nuggets, but its always been bagels, pancakes, and pasta for me!
This healthier single-serve bagel recipe is phenomenal. There are no other adjectives that properly describe it. It’s the easiest recipe ever, comes out perfectly every time, and pretty much foolproof. Since this grain-free bagel recipe doesn’t have any gluten or yeast, its impossible to over-mix or over-proof it. PLUS it’s ready in less than 20 minutes!
As a grad student cooking for one on a budget, single-serve recipes have been on repeat in my life. Single-serve recipes help ensure that I don’t accidentally waste food by making too much. You also won’t have to worry about using up valuable refrigerator/freezer space trying to store leftovers.
Air Fried Bagels
I know it sounds crazy at first but trust me with this one. Its really hard to make a bagel with a crispy crust & a fluffy, soft inside using grain-free flours. At the end of the day, an air fryer is simply a mini countertop convection oven and can easily be used for anything you would typically bake.
Air fried bagels have the perfect crispy exterior all around, which is something extremely hard to do with a traditional oven. Trust me, I’ve tried! Grain-free, gluten-free bagels I’ve tried to make in the past with a normal oven get mushy and soft on the bottom, but the air fryer seems to solve that issue seamlessly!
Healthier Cinnamon Crunch Bagels
We all know and love Panera’s famous Cinnamon Crunch Bagel, right? I have the biggest sweet tooth so this bagel always spoke to my soul being on the sweeter side of the bagel realm. The crunchy cinnamon topping contrasted with the texture of a good fluffy bagel is simply a dream.
When I was diagnosed with Ulcerative Colitis and a few other autoimmune diseases in 2020, I transitioned to a grain-free, paleo-based diet to help manage a few of my symptoms. After feeling a zillion times better eating a grain-free, refined-sugar-free diet focused on whole foods, I can sincerely say that I have absolutely no intentions of turning back! Especially since I’ve been able to develop some healthier versions of my old favorite foods, I don’t feel like I’m even missing out on anything anymore. And that’s coming from a girl who used to eat 2-3 bagels per day!
What You’ll Need:
- Large Air Fryer
- Parchment Paper
- Almond Flour
- Coconut Flour
- Tapioca Flour
- Pure Vanilla Extract
- Monk Fruit & Cinnamon
- Plain 0% Greek Yogurt
How to Make an Air Fried Bagel
Step 1: Combine the “dry” ingredients together in a small mixing bowl. Stir well.
Step 2: Add the Greek yogurt and vanilla to the flour mixture. Stir again until a thick bagel dough forms.
Step 3: Roll the dough into one large ball and use your hands to mold it into a bagel shape. Carefully place the molded dough in the basket of an air fryer lined with a sheet of parchment paper. Sprinkle the cinnamon & monk fruit mixture on top.
Step 4: Air fry for 18-20 minutes at 325F. Wait about 10 minutes before slicing. Enjoy it as is or toasted!

Ingredients
- 1/4 cup almond flour
- 1 tbsp. coconut flour
- 1 tbsp. tapioca flour
- 1/2 tsp. baking powder
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 cup + 1 tbsp. plain Greek yogurt
- 1/4 tsp. pure vanilla extract
- (topping) 1 tsp. monk fruit + 1/2 tsp. cinnamon
Instructions
- Combine the almond flour, coconut flour, tapioca flour, baking powder, cinnamon, and salt in a small mixing bowl. Stir well.
- Add the Greek yogurt and vanilla to the flour mixture and stir until a thick bagel dough forms.
- Roll the dough into a giant ball and use your hands to form it into a bagel shape. Carefully place it into the basket of a large air fryer lined with parchment paper.
- Air fry the bagel for 18-20 minutes at 325F. Let the bagel cool completely (about 10 minutes) before slicing. Enjoy plain or toasted!
