A Fun Paleo Breakfast Recipe!
Pancakes are easily my favorite food. I could probably eat pancakes for breakfast, lunch, and dinner without getting sick of them! Especially when they’re made with healthier paleo ingredients, pancakes can be extremely nourishing & satisfying. I always like to include paleo ingredients like collagen, eggs, and coconut flour to add in lots of protein and fiber without adding any sugar.
Even though there are to many savory paleo breakfast options, I’ve found it really hard to find good sweet options. Since I’ve started following a Paleo-based diet to manage ulcerative colitis symptoms, finding delicious sweet paleo breakfast recipes has been a struggle. I’ve always been one of the people who wakes up craving something sweet with my coffee in the morning.
So I took it upon myself to create the perfect fun paleo breakfast option, in pancake form! It’s the perfect cozy unique pancake skillet recipe, all for yourself. It almost feels like eating dessert for breakfast!
Paleo Pancake Skillets
There are so many variations of pancakes to make. Plain, blueberry, chocolate chip, pumpkin, banana, or whatever your heart desires. Even without different mix-in’s, there’s been a resurgence of fun ways to cook pancakes too that I’ve seen recently! These baked paleo pancake skillets are one of my current favorite paleo pancake variations.
This paleo pancake skillet recipe makes 2 pancake skillets, but they’re pretty small! I always end up eating both. I love having mini cast iron skillets on hand for fun single-serve recipes like this one. Mini skillets like these are a fun whimsical pancake vessel, but if you don’t have any on hand, any small oven-safe ramekin could work!
Blueberry Almond Pancakes
Blueberry pancakes have always been one of my favorite types of pancakes to make, second only maybe to chocolate chip! There’s something irresistible about warm, sweet blueberries paired with crunchy toasted slivered almonds that makes this paleo pancake skillet recipe a dream dish to wake up to. With that said, if you aren’t a big blueberry pancake person you can easily customize this recipe!
I’ve been obsessed with the blueberry almond pancake flavor variation with Spring Break just around the corner, but these paleo ingredients can easily be swapped for your favorite mix-in’s. A few of my other favorite paleo pancake add-ins include paleo chocolate chips, unsweetened shredded coconut, strawberries, chopped pecans, or sliced bananas.

- Mini 3.5″ Cast Iron Skillets
- Coconut Oil Cooking Spray
- Wild Dried Bluberries
- Slivered Almonds
- Coconut Flour
- Almond Flour
- Tapioca Flour
- Granulated Monk Fruit Sweetener
- Pure Vanilla Extract
- Pure Almond Extract
- Sea salt
How to Make Single-Serve Paleo Pancake Skillets
Step 1: Preheat the oven and prepare two mini cast iron skillets by spraying them with coconut oil cooking spray. Mix the dry ingredients in a small bowl.
Step 2: Stir in the egg, almond milk, and vanilla extract until a smooth pancake batter forms. Transfer half of the pancake batter into one 3.5″ mini cast iron skillet, and half in the other.
Step 3: Top the unbaked pancake batter with wild dried blueberries & slivered almonds. Bake for 7 minutes and enjoy warm with maple syrup or honey!

Ingredients
- 2 tbsp. coconut flour
- 1 tbsp almond flour
- 1 tbsp tapioca flour
- 1/2 tbsp. granulated monk fruit sweetener
- 1/2 tsp. baking powder
- 1/4 tsp. cinnamon
- 1/8 tsp sea salt
- 1 egg
- 1/3 cup unsweetened almond milk
- 1/4 tsp. pure vanilla extract
- 1/4 tsp. pure almond extract
- 2 tbsp. dried wild blueberries
- 2 tbsp. slivered almonds
Instructions
- Preheat the oven to 350F & prepare two 3.5″ mini cast iron skillets by lightly spraying with coconut oil cooking spray. Set aside.
- Mix the coconut flour, almond flour, tapioca flour, monk fruit, baking powder, cinnamon, and sea salt in a small mixing bowl until well combined.
- Add in the egg, almond milk, vanilla, & almond extract to the flour mixture and stir until a smooth pancake batter forms.
- Pour half of the batter into each of the prepared cast iron skillets. Evenly top the unbaked batter with the dried wild blueberries & almonds.
- Bake for about 7 minutes, until a toothpick comes out clean from the center. Top with honey or maple syrup & enjoy!
Notes
Any oven-safe ramekin will work for these baked pancakes if you don’t have small cast iron skillets!
