If berry cobbler and pancakes were mashed together… I’m pretty sure this would be the result!

I’m a BIG pancake fan. When I started following the specific carbohydrate diet, I was determined to create a whole bunch of amazing grain-free variations of my favorite breakfast!

My go-to breakfast recently has been my banana pancakes. When I ran out of bananas a few weeks ago but woke up craving fruity pancakes, these were the result!

Looking back, the brief banana shortage in my household was a blessing in disguise since it led to the creation of this fluffy, berry-packed, nutrient dense creation. This recipe has lovingly incorporated into my breakfast rotation the past few weeks. I’m loving it, and I’m beyond excited to share this one!

How to Make Grain-Free Berry Pancakes:

I decided to switch up my usual step-by-step instructions & create a how-to video for this one instead! Pancake instructions are a much easier to watch than read, you know?!

My Favorite Toppings:

The options are honestly endless! I feel like adding toppings to pancakes is absolutely necessary for me to feel full & satisfied after eating them. My favorite toppings for these healthy very berry paleo pancakes are below:

  • Honey sweetened 88 acres watermelon seed butter (mix watermelon seed butter + a squeeze of honey + water)
  • SCD-friendly yogurt
  • Berries (obviously!)
  • Pepitas, also known as raw pumpkin seeds
  • Honey
  • Almond butter

I love switching up the topping combinations for this recipe so it always feels fresh & different every time I make it! Focusing on options high in healthy fats & protein is KEY for me to feel ready to powder through my day.

Description

Delicious, sweet berry-packed paleo & specific carbohydrate diet friendly pancakes for one! Grain-free, gluten-free, refined sugar free.


Ingredients

Scale
  • 1/2 cup diced fresh strawberries
  • 1/2 cup fresh blueberries
  • 3 tbsp coconut flour
  • 1 tbsp almond flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • dash of salt
  • 1/3 cup almond milk
  • 3 tbsp. liquid egg whites

Instructions

  1. Combine the strawberries and blueberries into a small pot over medium heat for about 5 minutes or until the berries are soft.
  2. Mash the berries well. 
  3. Add in the coconut and almond flours, baking soda, baking powder, cinnamon, vanilla, almond milk, & egg whites. Mix until well combined. 
  4. Pour batter on to a lightly greased nonstick pan over low-medium heat.
  5. Cook the pancakes for 4-5 minutes. Flip & cook for another 4-5 minutes.
  6. Top with your favorite toppings & enjoy!
