Description
If cookie dough & frozen yogurt were ever combined into one, these would be the result! These freezer bombs are the perfect healthy, probiotic-packed frozen treat.
Ingredients
- 1 cup almond flour
- 3 tbsp. coconut flour
- 1 probiotic drink OR 2 tbsp. plain greek yogurt mixed with 2 tbsp. almond milk
- 2 tbsp. cashew butter
- 1 tbsp. coconut oil, melted
- 3 tbsp. fresh lemon juice
- 1 tsp. vanilla
- 1/4 cup coconut flakes
- 1 cup diced strawberries
- 1 tbsp. honey
Instructions
- In a small pot, combine the strawberries & honey. Let the mixture simmer over medium heat for about 7-8 minutes, or until the strawberries are soft. Mash with a fork.
- In a medium sized bowl, combine the almond flour, coconut flour, probiotic drink (or greek yogurt + almond milk mixture), cashew butter, coconut oil, lemon juice, vanilla, and coconut flakes. Beat well with an electric mixer until a cohesive “dough” forms.
- Add in the strawberry and honey mixture and mix until its well incorporated.
- Scoop out the dough with a cookie dough scoop and place in an air tight container. (Optional) Top each “bomb” with coconut flakes & dried lemon zest. Freeze for at least 1 hour before serving.
Notes
I’ve found that the texture is best after freezing overnight & letting the freezer bombs sit at room temperature 5-10 minutes before eating!
