I’m the type of person who always needs an easy snack stashed away in my freezer… these freezer bombs have the texture of creamy frozen yogurt & are absolutely packed with probiotics too!

If froyo & cookie dough were ever be thrown together into one dessert, I’m pretty sure these would be the result!

ALSO: the flavor reminds me of the strawberry lemonade my mom used to buy and its bringing back all of my favorite summer memories.

My freezer bombs are made with fresh strawberries, almond flour, cashew butter, fresh lemon juice, & a couple of other nourishing ingredients! The probiotic punch comes from one of my new favorite fermented dairy probiotic drinks, but it can be substituted for plain greek yogurt and a dash of extra almond milk.

Although greek yogurt is not traditionally “allowed” on the Specific Carbohydrate Diet (which I try to follow in order to manage my ulcerative colitis symptoms) I have found that the beneficial bacteria found in yogurt is more beneficial than it is harmful for me. Because of this, I love incorporating it into my recipes!

BUT it’s super important to note that if you are looking for the benefits of probiotics in a recipe, be sure that the recipe doesn’t call for baking/cooking. Heat will kill the healthy probiotics!

How to Make Freezer Bombs

Step 1: Combine the strawberries and honey together in a small pot. Place on the stovetop over medium heat for about 7-8 minutes. The berries should be soft enough to easily mash with a fork.

Step 2: Combine the almond flour, coconut flour, cashew butter, coconut oil, probiotic drink (or greek yogurt), vanilla, lemon juice, and coconut flakes.

Step 3: Add in the mashed strawberry honey mixture and beat with an electric mixer until a cohesive, creamy “dough” forms.

Step 4: Scoop the dough out with a cookie dough scoop. It’s totally optional, but I like to top each “bomb” with coconut flakes and dried lemon zest. Place in an air tight container and freeze for at least an hour.

Description

If cookie dough & frozen yogurt were ever combined into one, these would be the result! These freezer bombs are the perfect healthy, probiotic-packed frozen treat.


Ingredients

Scale
  • 1 cup almond flour
  • 3 tbsp. coconut flour
  • 1 probiotic drink OR 2 tbsp. plain greek yogurt mixed with 2 tbsp. almond milk
  • 2 tbsp. cashew butter
  • 1 tbsp. coconut oil, melted
  • 3 tbsp. fresh lemon juice
  • 1 tsp. vanilla
  • 1/4 cup coconut flakes
  • 1 cup diced strawberries
  • 1 tbsp. honey

Instructions

  1. In a small pot, combine the strawberries & honey. Let the mixture simmer over medium heat for about 7-8 minutes, or until the strawberries are soft. Mash with a fork.
  2. In a medium sized bowl, combine the almond flour, coconut flour, probiotic drink (or greek yogurt + almond milk mixture), cashew butter, coconut oil, lemon juice, vanilla, and coconut flakes. Beat well with an electric mixer until a cohesive “dough” forms. 
  3. Add in the strawberry and honey mixture and mix until its well incorporated. 
  4. Scoop out the dough with a cookie dough scoop and place in an air tight container. (Optional) Top each “bomb” with coconut flakes & dried lemon zest. Freeze for at least 1 hour before serving. 

Notes

I’ve found that the texture is best after freezing overnight & letting the freezer bombs sit at room temperature 5-10 minutes before eating!
