Alas, a one-stop-shop recipe for a cozy weekend breakfast, made just for you! This healthy single-serve quiche is full of warm, seasonal flavors wrapped in a buttery almond flour crust. It doesn’t get much better in my opinion…

A Healthy, Grain-Free Quiche Recipe!

This healthy quiche recipe always hits the spot when I’m craving something sweet, salty, and filling in the morning! The combination of sweet figs, spicy nutmeg, and salty goat cheese is MAGICAL. It might sound crazy, but trust me on this one.

Not only is it delicious, but this mini quiche is packed with healthy fats and has 14 grams of high-quality protein from Greek yogurt and eggs! Because of this, I feel like it keeps me full for hours.

A Single-Serve, Fun Weekend Breakfast

Because I’m still a college student (and looking forward to yet another 2 more years of grad school), single-serve recipes have been my jam. I often only cook for myself, and I’m simply just not a leftover food fan… trust me, I’ve tried to be. But some things quite simply just aren’t that good on Day 2, 3, 4, etc.

To save time and money, I often find myself creating single-serve versions of some of my favorite foods. You could even go so far to say creating single-serve/small-batch recipes is a frequent hobby of mine! LOL. Says no 21-year-old college student ever.

This fig & goat cheese quiche is one of those recipes. And I pinky promise you won’t regret making it.

Especially on a slow Sunday morning, when I have 30 minutes to drink coffee and jam out to my favorite acoustic playlist in the kitchen while I wait for this single-serve quiche in the oven… this recipe is a game-changer.

What is “SCD” Though?!

“SCD” is an acronym for the Specific Carbohydrate Diet. This diet is one that focuses on removing specific, inflammatory carbohydrates from the diet to help people with IBD, celiac disease, and even Autism!

Similarly to the Paleo diet, the specific carbohydrate diet focuses a lot on minimally processed foods with no added sugars or modern chemical additives.

I first started following the SCD last year, when my severe ulcerative colitis diagnosis landed me in the hospital. Since this flare, I’ve been able to reverse my IBD symptoms into remission with a combination of my diet/lifestyle change and Humira!

How to Make Single-Serve Quiche:

Step 1: Lightly spray a small, 3.5″ oven-safe ramekin with cooking spray and set aside. In a small bowl, mix the crust ingredients together.

Step 2: Transfer the almond flour crust mixture into the ramekin, using your hands to lightly press the dough to cover the surface of the ramekin. Bake at 400F for 12 minutes.

Step 3: While the crust is baking, whisk the egg with the Greek yogurt, salt, nutmeg, and cinnamon. Set aside.

Step 4: Sprinkle the finely diced dried figs, crumbled goat cheese, and raw pumpkin seeds over the base of the baked crust in the ramekin. Pour and egg & Greek yogurt filling inside of the crust.

Step 5: Bake and top with more Greek yogurt, apricot jam, and raw pumpkin seeds.

Description

The best healthy, SCD-friendly single-serve quiche recipe! This healthy breakfast has the perfect blend of sweet seasonal figs, salty goat cheese, and warm nutmeg flavors. SCD, High Protein, Refined-Sugar-Free, Grain-Free, Gluten-Free. 


Ingredients

Scale

Crust: 

  • 1/4 cup almond flour
  • 1 tsp. coconut flour
  • 1/2 tbsp. coconut oil, melted
  • 1 tbsp. egg whites
  • 1/2 tsp. pure vanilla extract
  • 1/8 tsp. coarse sea salt

Filling: 

  • 1 egg
  • 2 tbsp. Plain Greek yogurt
  • 1/8 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1/8 tsp. salt

Add-in’s:

  • 1 tbsp. finely diced dried pajarero figs
  • 1/2 tbsp. goat cheese, crumbled
  • 1 tsp. raw pumpkin seeds

Instructions

  1. Preheat the oven to 400F. Lightly grease an oven-safe mini 3.5″ ramekin or cast iron skillet with non-stick cooking spray (or coconut oil if using a cast iron pan).
  2. Mix the crust ingredients together in a small dish until well-combined. Press the crust mixture evenly along the base and sides of the ramekin using your hands. Bake for 12 minutes.
  3. Turn the oven down to 325F while the baked crust cools.
  4. Mix the quiche filling by whisking the egg with the Greek yogurt, salt, cinnamon, and nutmeg until a creamy and smooth mixture forms.
  5. Sprinkle the diced figs, crumbled goat cheese, and raw pumpkin seeds along the base of the baked crust in the ramekin. Pour the filling mixture inside of the baked crust in the ramekin.  
  6. Bake for 25-30 minutes, until the egg mixture is “set” and firm to the touch. Eat Warm!

Notes

(Optional) top with additional Greek yogurt, SCD-friendly refined-sugar-free apricot jam, and pumpkin seeds!
