SCD Single-Serve Almond Butter Bread

Fast, fluffy, (dare I say) moist, SCD-friendly BREAD! As a runner who grew up on bagels, toast, and sandwiches, transitioning to a grain-free diet to help manage ulcerative colitis was tough… until I perfected this loaf.

The most fun part: I designed this recipe to be single-serve! There’s something so satisfying about diving into your own warm, fresh loaf. Another bonus: it only takes 5 simple, nourishing ingredients to bake.

I’ve found myself making this grain-free loaf to snack on at least a couple times per week. It’s become one of my favorite 15 minute recipes since beginning my journey in making SCD fun!

Ingredients:

Creamy salted almond butter

1 egg

Unsweetened almond milk

Vanilla

Baking soda

Substitutions & Modifications

The creamy salted almond butter can be substituted for unsalted creamy almond butter, but add 1/8tsp of salt.

The creamy salted almond butter can also be substituted for other creamy nut butters: I’ve tried cashew butter and Trader Joe’s Mixed Nut Butter and the loaf still came out so well!

Add 1/8tsp of cinnamon for a subtle “dessert-like” flavor. I’ve been doing this a lot recently!

SCD Single-Serve Almond Butter Bread

Description

Fluffy, moist, grain-free, SCD-friendly bread. Perfect for a nourishing breakfast, easy lunch, or satisfying snack!


Ingredients

Scale
  • 1/4 cup creamy salted almond butter
  • 1 egg
  • 1tbsp. unsweetened almond milk
  • 1/4tsp. pure vanilla extract
  • 1/4tsp baking soda

Instructions

  1. Preheat oven to 350F. Lightly spray a mini loaf tin with non-stick spray.
  2. In a small bowl, combine all of the ingredients and beat with an electric hand mixer until a smooth, slightly runny batter forms.
  3. Pour the batter into the mini loaf tin.
  4. Bake for 12-14 minutes, or until a toothpick comes out clean from being inserted into the center.
  5. Let the loaf cool at least 10 minutes before slicing.
