scd pumpkin waffles

Description

Lightly sweetened, super flavorful grain-free pumpkin waffles that follow the specific carbohydrate diet! These are also paleo-friendly, gluten-free, and refined sugar free.


Ingredients

Scale
  • 3/4 cup unsweetened pumpkin puree
  • 1 egg + 1 egg white
  • 3 tbsp. coconut flour
  • 1/3 cup unsweetened almond milk
  • 2 tbsp. plain greek yogurt
  • 1 tsp vanilla extract
  • 1/2 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. baking powder
  • a dash of salt

Instructions

  1. Plug in the waffle iron to start heating.
  2. Combine all of the ingredients in a small bowl and whisk until a cohesive batter forms.
  3. Lightly spray the waffle iron with nonstick spray and pour about 3 tbsp. of batter at a time onto a mini waffle iron.
  4. Close and cook until the indicator light on the waffle iron turns off.
  5. Once cooked, carefully lift the waffle out of the iron with a fork and repeat steps 3 & 4 until all of the batter is used.
  6. Top with any toppings you desire and serve warm.

Notes

This recipe can also be used for pancakes.

Instead of mini waffles, this recipe can also be used to make 1 large Belgian waffle

My favorite toppings include honey sweetened greek yogurt, nut butter, and my scd-friendly caramel sauce.
