Description
Juicy & tender SCD-friendly venison meatballs with all my favorite pizza-inspired spices. Layered with spinach, shaved warm, and fresh tomato for a perfect appetizer recipe!
Ingredients
- 1 1/4 lbs. ground venison (ground beef, turkey, or chicken works as well)
- 1 egg
- 1/4 cup almond flour
- 2 tbsp. finely chopped red onion
- 1/2 tbsp. dried oregano
- 1/2 tbsp. dried parsley
- 1 tsp. garlic powder
- 1/2 tsp. sea salt
- 1/2 tsp. onion powder
- 20 small spinach leaves
- 40 pieces of shaved parmesan cheese
- 10 grape tomatoes, sliced in half
Instructions
- Combine all of the ingredients in a large mixing bowl.
- Using a spoon (or your hands), mix until well-combined and all of the ingredients appear to be evenly distributed.
- Scoop out the mixture in 1-2oz. pieces. Form into balls by rolling between the palms of your hands.
- Place the meatballs in a lightly greased air fryer basket and air fry at 375F for 10 minutes. (Oven method: place the meatballs on a baking sheet and bake at 400F for 20 minutes).
- Assemble the skewers by layering a spinach leaf, 2 pieces of shaved parmesan, and 1/2 of a grape tomato on top of the meatball. Use a wooden toothpick to keep the ingredients in place.
- I recommend serving these warm with no-sugar-added pizza sauce!
