Soft and buttery cookies filled with sweet raspberry jam and crunchy almonds, truly the most perfect holiday treat! To make it better, these cookies are totally grain-free, paleo, SCD friendly, gluten free, and dairy-free: HELLO.

Grain-Free Thumbprint Cookies

These thumbprint cookies are one of my favorite cookie recipes! They turn out perfectly every time, and they are always a crowd favorite. You can barely even tell that they’re grain-free, paleo, and SCD-friendly!

Since I’ve been following the Specific Carbohydrate Diet to manage my ulcerative colitis symptoms, I’ve been on a mission to re-create all of my old favorite cookie recipes. My grandma’s cookie recipes were always the best growing up so I pulled out all of her recipe cards and worked on perfecting healthier versions using almond flour, coconut oil, and honey.

My family said that these thumbprint cookies were just as good as the original… SO as long as you don’t tell anyone that they’re “healthy”, they’ll never know. *Wink Wink*.

In my opinion, these thumbprints aren’t only for the holidays either! I like to make blueberry lemon thumbprint cookies for the summer, and the raspberry almond flavor hits the spot in the colder fall and winter months. There’s something so cozy about a sweet almond flavored cookie and raspberry jam paired with a warm mug of tea before bed… SUCH a vibe.

A Healthier Holiday Dessert Recipe!

I’m not saying that eating grain-free, gluten-free, dairy-free, blah blah blah is healthier for everyone BUT if you’re a gal living with IBD this cookie recipe is a life saver. I still feel amazing after eating 3 of these- there’s something to be said for that!

If you are suffering from IBD (or something similar), the Specific Carbohydrate Diet changed my life… yes, that sounds incredibly dramatic but it’s true! The SCD is a way of eating that focuses on minimally processed foods that restricts certain inflammatory carbohydrates. It could even be described as almost paleo, if that’s more familiar to you!

There are several websites, books, and resources that offer more detailed information on the SCD (I’ll link them below). Although the research is young, I feel like a living walking breathing example of what it can do!

SO over the past few months, my passion has been recreating all of my old favorite recipes and meals to follow the Specific Carbohydrate Diet! I simply just swap out ingredients that are “illegal” on the SCD with similar ingredients that are on the “legal” list.

A few of my go-to SCD legal ingredients for baking include almond flour, coconut flour, coconut oil, eggs, and honey!

How to Make SCD Thumbprint Cookies

Step 1: In a large mixing bowl, combine almond flour, coconut flour, baking powder, and salt in a large mixing bowl. Stir.

Step 2: Add in the egg, melted coconut oil, honey, vanilla extract, and almond extract. Beat with an electric hand mixer until a thick cookie dough forms.

Step 3: Cover the dough and chill in the freezer for 15 minutes. Scoop out the dough, using a 2tbsp. measuring spoon, and roll lightly between the palms of your hands to smooth. Roll the balls of cookie dough into chopped almonds before placing on a greased baking sheet.

Step 4: Press a hole into the center of each cookie dough ball using your thumb. Fill each hole with raspberry jam.

Step 5: Bake and top with a coconut butter glaze before serving!

Description

Soft and buttery paleo/SCD-friendly almond cookies with a sweet raspberry jam. SCD, Paleo, Grain-Free, Gluten-free, Dairy-Free, Refined-sugar-free. 


Ingredients

Scale
  • 1 3/4 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, room temperature
  • 1/3 cup coconut oil, melted and cooled
  • 1/4 cup honey
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1/4 cup chopped almonds

(Optional): 1/4 cup melted coconut butter, to glaze.


Instructions

  1. Preheat the oven to 350F and lightly grease a baking sheet with nonstick spray. 
  2. In a large bowl, combine the almond flour, coconut flour, baking powder, and salt. Stir. 
  3. Add in the egg, coconut oil, honey, vanilla extract, and almond extract. Beat with an electric hand mixer until a thick dough forms. Cover and place in the freezer to chill for 15 minutes. 
  4. Using a 2 tbsp. measuring spoon, scoop out the chilled dough on to the cookie sheet. Lightly roll each cookie dough ball between the palms of your hands to smooth. Roll each ball in the chopped almonds. 
  5. Using your thumb, press a hole into the center of each cookie dough ball. Fill the hole with raspberry jam. 
  6. Bake for 8-10 minutes, until slightly golden-brown on the bottom.
  7. (Optional) Glaze with the melted coconut butter before serving!
