Homemade protein bars packed with collagen for a healthy snack! Between the perfect sweet & zesty blueberry lemon flavor combo and the satisfying boost of protein and healthy fats, these collagen bars have quickly become one of my favorite snacks to prep for busy weeks! SCD, Paleo, Grain-free, Gluten-free, Refined-Sugar-Free, Dairy-Free, No-Bake.
Ingredients
- 1 cup creamy cashew butter
- 1/2 cup unflavored collagen peptides
- 2.5 tbsp. coconut flour
- 3 tbsp. monk fruit sweetener
- 1 tsp. fresh lemon zest
- 2 tbsp. fresh lemon juice
- 1/4 cup dried wild blueberries
- 2 tbsp. unsweetened shredded coconut
Instructions
- Prepare a 9″x5″ loaf pan by lining it with parchment paper.
- In a large mixing bowl, combine all of the ingredients together. Stir well until a thick mixture forms.
- Press the mixture evenly into the prepared loaf pan.
- (Optional) Top with additional dried blueberries, shredded coconut, and lemon zest, pressing slightly.
- Refrigerate overnight or freeze for at least 3 hours. Slice into evenly sized bars and enjoy! Refrigerate leftovers in an air-tight container for the best texture.
