Lemon & coconut are equivalent to peanut butter & jelly in my book. I’m convinced that these 2 flavors are made for each other!

Especially in no-bake cookie form- I CANNOT get enough of these right now. They have the perfect blend of sweet & zesty that has me craving them on these warm spring/summer days.

No-bake desserts also just have a special place in my heart… they’re 99% fool-proof & I’m HERE FOR IT. I don’t have to worry about burning, under-baking, waiting, pre-heating, cooling, blah blah blah.

These lemon coconut cookies are also specific-carbohydrate-diet friendly, paleo, refined-sugar-free, grain-free, gluten-free. So in other words, if you have a mouth you can probably eat these! I have a very good feeling that these will be one of my go-to desserts this summer.

How to Make Healthy No-Bake Cookies

Step 1: Mix together the dry ingredients: cashew flour, coconut flour, coconut flakes, and collagen.

Step 2: Add in the cashew butter, lemon juice, honey, coconut oil, and vanilla. Beat with an electric mixer until well-combined (or stir very well!)

Step 3: Scoop out the dough with a spoon and use your hands to form the cookies. This recipe should make about 8.

Step 4: Eat right away or store in the refrigerator for later!

Description

Zesty, coconutty no-bake cookies perfect for a refreshing treat! Made with wholesome, nourishing ingredients that are also allowed on the specific carbohydrate diet.


Ingredients

Scale
  • 3/4 cup cashew flour
  • 2 tbsp. coconut flour
  • 2 tbsp. unsweetened coconut flakes
  • (optional) 1 scoop collagen protein powder
  • 1/4 cup cashew butter
  • 3 tbsp. fresh lemon juice
  • 1 tbsp. melted coconut oil
  • 1 tbsp. honey
  • 1 tsp. vanilla extract

Instructions

  1. In a medium-sized bowl, stir together the cashew flour, coconut flour, coconut flakes, and collagen until well combined. 
  2. Add in the cashew butter, lemon juice, coconut oil, honey, and vanilla. Beat with an electric mixer until a cohesive dough forms.
  3. Scoop out cookie dough, using your hands to form the cookies.
  4. The cookies can be enjoyed right away or put in the refrigerator for later.

Notes

I like the cookies best out of the fridge- I find that they hold together a little bit better!

The collagen protein powder is totally optional, but I like adding it in for an extra nutrition boost.
