SCD Mediterranean Pasta Salad

Description

A healthy, grain-free pasta salad recipe with all of my favorite Mediterranean inspired flavors! SCD-friendly, grain-free, gluten-free, high-protein, high-fiber. 


Ingredients

Scale
  • 3 cups red lentil pasta
  • 1 cup diced cucumber
  • 1 cup sliced grape tomatoes
  • 2 tbsp. flax oil (or extra virgin olive oil)
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried parsley
  • 1/2 tsp. ground coriander
  • 1/2 tsp. paprika
  • 1/2 tsp. Himalayan pink salt
  • 1/4 tsp. dried lemon zest
  • 1/4 tsp. black pepper

Optional: fresh chopped parsley to garnish


Instructions

  1. Cook the red lentil pasta according to the instructions on the box, drain, and rinse under cold water for 1 minute. Transfer into a mixing bowl. 
  2. Add the cucumber, tomatoes, and flax oil to the pasta in the mixing bowl. Gently toss with a spoon.
  3. In a separate small dish, combine the dried oregano, dried parsley, ground coriander, paprika, lemon zest, salt, and pepper. 
  4. Add the spice mixture into the mixing bowl with the pasta and toss until well combined. 
  5. Serve right away or transfer the salad into an air-tight container to store in the refrigerator. 

Notes

Any pasta will work for this recipe!
