SCD Holiday Spiced Shortbread Cookies

Description

Soft and buttery grain-free, SCD shortbread cookies with a hint of my favorite warm holiday spices! Paleo friendly, Grain-free, Gluten-free, Refined-sugar-free, Soy-free, SCD friendly. 


Ingredients

  • 2/3 cup coconut flour
  • 1/2 cup cold grass-fed ghee (or butter)
  • 2 tbsp. honey
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/4 tsp. ground nutmeg
  • (optional) 100% dark chocolate, for the drizzle

Instructions

  1. Preheat the oven to 350F. Lightly spray a cookie sheet with nonstick cooking spray. 
  2. Combine the coconut flour and cold ghee in a mixing bowl. Using a pastry cutter (or 2 knives) cut the ghee into the flour until the mixture has a uniform crumb-like texture. 
  3. Add in the honey, vanilla, cinnamon, and nutmeg. Stir or mix with your hands until a uniform dough forms. Make sure not to over-mix to melt the ghee. 
  4. Using a tablespoon, scoop out the dough into about 13 uniform-sized balls. Roll between the palms of your hands to smooth. 
  5. Place on the cookie tray. Use a fork to lightly press down each ball of cookie dough is a criss-cross pattern. 
  6. Bake for about 7 minutes. 
  7. While the cookies are baking, microwave the chocolate for 30 seconds at a time until melted. Drizzle over the baked cookies & serve!
