A Healthy, Grain-Free Waffle Recipe!
Turns out, making light and fluffy waffles from nuts is HARD.
But these nearly fit the big shoes they had to fill. The Hungry Jack “just add water” mix from my childhood will always be hard to follow up!
Since I was diagnosed with ulcerative colitis, a form of IBD, I’ve started eating based on the Specific Carbohydrate Diet (SCD) to help reduce the severe inflammation. The SCD focuses on removing inflammatory carbohydrates and adding in wholesome, minimally processed ingredients. Although I’ve been able to add in a few foods that are not traditionally allowed on the SCD as my symptoms have subsided, I would say that I still closely follow the SCD guidelines.
Long story short: out of desperation, I’ve permanently ditched the traditional boxed pancake & waffle mix. All in the name of gut health.
Honestly, making my own healthy waffles from almond and coconut flours are *almost* just as easy! Not to mention, I also feel a zillion times better eating these too. Especially first thing in the morning, I absolutely NEED a breakfast that has a good amount of protein and healthy fats to power me through!
SCD Waffles with Goat Cheese!

Boring?
Flavorless?
Uninspired?
I mean JUST LOOK at the crispy cheese edges!
Although any type of softer cheese can be thrown into the waffle batter, goat cheese has a special place in my heart. The almost cream-cheese-like texture and unique nutty/salty flavor is simply unmatched in my eyes.
Goat cheese is one of those that walks the line between sweet and savory… and I’m here for it!
A Fun Sweet & Savory Breakfast:
As I said before, I’ve used these waffles as a canvas for both sweet and salty cravings. We all know that I’m on Team Sweet when it comes to breakfast, but I’m totally guilty of making a savory breakfast for dinner WAY too often!
Savory: My favorite toppings include eggs, avocado, and tuna. These goat cheese waffles would also be delicious served with chicken (for a chicken and waffles vibe ?).
Sweet: 99% of the time, I’m on this route. I love to top a sweet waffle stack with fresh or dried fruit, nuts, honey, greek yogurt, coconut flakes. Anything and everything! I even made my own SCD strawberry syrup to go with this recipe- FYI goat cheese and strawberries are a match made in heaven.
Refined-Sugar Free Strawberry Syrup:
This healthy, refined-sugar-free strawberry syrup is the perfect sweet, slightly tart waffle or pancake addition!
It only takes 4 easy ingredients to make:
- Strawberries (I use frozen for convenience, fresh works as well)
- Water
- Honey
- Monk Fruit

How to Make Grain-Free Goat Cheese Waffles:
Step 1: Combine the almond flour, coconut flour, baking powder, and cinnamon. Stir well.
Step 2: Add in the egg, almond milk, vanilla extract, and ACV. Stir until a cohesive batter forms.
Step 3: Add the crumbled goat cheese and gently stir until evenly distributed. Cook in a lightly greased waffle iron until the indicator light comes on, about 5 minutes.

Description
Soft and fluffy grain-free, specific carbohydrate diet (SCD) friendly waffles filled with melted goat cheese! Grain-free, gluten-free, refined-sugar-free, SCD, high protein.
Ingredients
- 1/3 cup almond flour
- 1 tbsp. coconut flour
- 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 egg
- 2 tbsp. unsweetened almond milk
- 1/2 tsp. vanilla
- 1/4 tsp. apple cider vinegar
- 2 tbsp. crumbled goat cheese
Instructions
- Preheat a waffle iron.
- In a bowl, combine the almond flour, coconut flour, baking powder, and cinnamon. Stir well.
- Add in the egg, almond milk, vanilla, and ACV. Stir again until a smooth waffle batter forms.
- Fold in the crumbled goat cheese so that its well-distributed throughout the batter.
- Lightly grease the waffle iron and pour the batter on to the iron. Close it and cook until the indicator light turns on, about 5 minutes.
