scd coconut cashew lemon bombs

Description

Lemony, nutty, tropical flavors all blended together to make the most delicious scd-friendly treat. The cookie dough consistency and nourishing ingredients make these irresistible! 


Ingredients

Scale
  • 1 cup cashew flour
  • 3 tbsp coconut flour
  • 1 tbsp wild honey
  • 1 scoop collagen peptides (totally optional! I used FurtherFood )
  • 3 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 3 tbsp lemon juice
  • 1 tbsp unsweetened almond milk
  • unsweetened coconut flakes

Instructions

  1. In a medium sized bowl, mix together all of the ingredients (except the coconut flakes) using a spoon until a cohesive dough forms.
  2. Use a cookie scoop to scoop out the dough into uniformly sized balls. 
  3. Roll the balls in unsweetened coconut flakes.
  4. Eat right away or store in an air-tight container in the refrigerator for later.

Notes

  • The cashew flour can be replaced with blanched almond flour! However, I LOVE the slight flavor that the cashews bring to this recipe. 
  • The amount of lemon can be adjusted to your personal taste. I prefer a more subtle lemon flavor, so feel free to add in a bit more lemon juice or lemon zest!
  • A food processor could also be used to mix the dough.
