It’s lemon season!! As the weather gets warmer, I always find myself looking for all things fresh and zesty- so these coconut cashew lemon flavored cookie dough balls hit the spot.
When I’m on my college class schedule, this sweet snack saves the day when I’m super busy. These bombs are absolutely packed with super satisfying healthy fats. PLUS they have the texture of cookie dough… it takes SO much self control to not eat the whole batch!!
I like to make a bunch over the weekend and store them in the fridge to grab whenever I need something quick and sweet- which happens often for me if I’m honest- no shame in my game. Especially since these lemon bombs are made with wholesome, nourishing ingredients and natural sweeteners (aka honey)!
All you need to make these are a bowl and a spoon: no fancy kitchen equipment needed! With that said, if you wanted to pull out your food processor for this one since you did an arm workout at the gym, more power to you, sis!
My other favorite tip to make these energy bombs even easier to make is using one of those lunch lady cookie/mashed potato scoopers to scoop out the dough into perfectly round and uniform balls, but if you don’t have one on hand, a regular tablespoon will work just fine.

Description
Lemony, nutty, tropical flavors all blended together to make the most delicious scd-friendly treat. The cookie dough consistency and nourishing ingredients make these irresistible!
Ingredients
- 1 cup cashew flour
- 3 tbsp coconut flour
- 1 tbsp wild honey
- 1 scoop collagen peptides (totally optional! I used FurtherFood )
- 3 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 3 tbsp lemon juice
- 1 tbsp unsweetened almond milk
- unsweetened coconut flakes
Instructions
- In a medium sized bowl, mix together all of the ingredients (except the coconut flakes) using a spoon until a cohesive dough forms.
- Use a cookie scoop to scoop out the dough into uniformly sized balls.
- Roll the balls in unsweetened coconut flakes.
- Eat right away or store in an air-tight container in the refrigerator for later.
Notes
- The cashew flour can be replaced with blanched almond flour! However, I LOVE the slight flavor that the cashews bring to this recipe.
- The amount of lemon can be adjusted to your personal taste. I prefer a more subtle lemon flavor, so feel free to add in a bit more lemon juice or lemon zest!
- A food processor could also be used to mix the dough.
