A healthy cookie dough snack recipe I’ve been in LOVE with these past few weeks! Totally grain-free, gluten-free, paleo, protein-packed, refined-sugar-free, and specific carbohydrate diet friendly.
I grew up scraping out the mixing bowl every time mom made cookies so its no secret that cookie dough is my THING. The dessert I can’t pass up. To be honest, it might even baked cookies in my opinion… yup I went there.
The BEST Paleo Cookie Dough Bites!
These coconut cashew paleo cookie dough bites are one of my favorite treats to have stored in my fridge or freezer. They’re sweet, satisfying, and so easy to make with only 6 simple ingredients!
The coconut flakes give the cookie dough a punch of healthy fats while also adding the chewy texture that almost reminds me of an oatmeal cookie. I’m a big fan of anything coconut, especially paired with the nutty flavor of cashew butter!
Coconut oil has been shown to have a high amount of healthy fatty acids, aka MCT’s. Medium chain triglycerides (MCT’s) are shorter than most other fatty acid chains and are quickly transported to the liver to be used by the brain and other important organs as an energy source. PLUS a 2016 study has shown that there is a possible link between a MCT-enriched diet and an improved balance of “good” and “bad” bacteria in our bodies. This study also suggested that consuming a higher amount of MCT’s may reduce gut permeability (aka improve “leaky gut” symptoms).
I love rolling these cookie dough bites in shelled hemp hearts. Hemp hearts are technically a nut and have a very slight nutty flavor. They are also an absolute powerhouse when it comes to protein, fiber, and essential fatty acids! I try and sneak them into my diet as much as possible. Although hemp hearts aren’t “legal” on the specific carbohydrate diet (which I follow closely to manage my ulcerative colitis symptoms), I’ve found that I still feel really good after eating them.
Because these cookie dough bites are full of so many superfoods, I’ve found myself eating these with my cup of coffee in the morning, as an afternoon snack, or as a delicious sweet dessert at night. You just can’t go wrong with these!
PLUS they don’t require any baking and take less than 5 minutes to make.
How to Make Healthy Cookie Dough Bites
Step 1: Combine the cashew butter and honey together in a microwave-safe bowl. Microwave on high for about 45 seconds so that the cashew butter is slightly “melted” and super creamy.
Step 2: Add in the coconut flour, collagen powder, vanilla, hemp hearts, and unsweetened coconut flakes. Stir until a cohesive dough forms.
Step 3: Use a cookie dough scooper to scoop out the dough into uniform “bites”. Eat the bites right away or store in the refrigerator or freezer for later!
(Optional): roll in hemp hearts for an extra punch of essential nutrients!

- 1 cup creamy salted cashew butter
- 1 tbsp. honey
- 1.5 tbsp. coconut flour
- 1 tbsp. vanilla extract
- 1/4 cup unsweetened coconut flakes
- 2 scoops (about 1/4 cup) unflavored collagen powder
(Optional): 1/3 cup hemp hearts to roll the bites in.
Instructions
- Combine the cashew butter and honey together in a medium-sized microwave safe bowl. Microwave on high for about 45 seconds until the cashew butter is slightly “melted” and extra creamy. Fold the honey in with a spoon.
- Add in the coconut flour, vanilla, collagen powder, & coconut flakes. Stir well until a cohesive dough forms.
- Use a cookie dough scooper to scoop out the dough into uniformly sized bites.
- (optional) Lightly roll the cookie dough bites in hemp hearts.
- Eat right away or store in the refrigerator or freezer inside an air tight container for later.
