Description
Soft & moist grain-free vanilla cake donuts with a crumb topping. Filled with cherries & balanced with a subtle gouda cheese flavor! Grain-free, gluten-free, refined sugar free, and SCD friendly.
Ingredients
Donuts:
- 1 cup blanched almond flour
- 1/4 cup coconut flour.
- 1 tsp. baking powder
- 1/8 tsp. salt
- 2 eggs
- 1/4 cup unsweetened almond milk
- 2 tbsp. honey
- 2 tsp. vanilla
- 1 tsp. apple cider vinegar
- 1/3 cup diced sweet cherries
- 1/3 cup shredded gouda cheese
Crumble:
- 1/4 cup almond flour
- 1 tbsp. butter, melted
- 1/2 tbsp. almond butter
- 1/4 tsp. vanilla
Instructions
- Preheat the oven to 350F and lightly grease a silicone donut mold with butter or cooking spray.
- In a small dish, prepare the almond butter crumble to top the donuts. Combine all of the crumble ingredients and stir until a crumbly mixture forms and set aside.
- In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Stir well.
- Beat in the eggs, honey, almond milk, vanilla, and apple cider vinegar with an electric mixer until well combined with the flour mixture.
- Stir in the diced cherries and shredded gouda.
- Cut off the corner of a plastic bag or use a piping bag. Fill the bag with the donut batter and evenly pipe the batter into the donut mold.
- Top each donut with some of the crumble mixture before baking.
- Bake for 15 minutes. Let the donuts cool completely before removing them from the mold.
Notes
Optional: drizzle the donuts with unsweetened watermelon seed butter or any other nut/seed butter!
