Ok ok, the title gives it away. But gouda cheese is the fun twist to this donut recipe and it compliments the sweet cherry flavors perfectly! These healthier paleo donuts make for my dream breakfast, and I’m so excited to share them.
Grain-free & SCD-friendly Baked Donuts
Donuts have always been that special breakfast we would have only a couple of times per year. It’s no secret that the sugary, fried treat wasn’t exactly the best way to start the day… but it was always SO worth the energy crash later!
When I was diagnosed with an autoimmune disease -ulcerative colitis- I was forced to make a huge diet and lifestyle change to keep me healthy! That involved going all-in on the specific carbohydrate diet (SCD), which removes all grains, soy, gluten, and dairy in order to reduce inflammation. Long story short, I had to get creative when it came to being able to enjoy my old favorite sweet breakfast!
I’ve come to LOVE baking SCD-friendly donuts myself. They’re surprisingly quick and easy, especially with a silicone donut mold! They only take 15 minutes in the oven and they easily pop out of the molds when they have cooled!
This basic vanilla cake donut recipe is also so versatile. The cherries can easily be replaced with other berries or chocolate chips, and the crumb topping can be replaced with any other frosting or syrup drizzle! Two of my favorite donut toppings include my SCD caramel sauce & homemade blueberry lemon syrup. But the cherry and cheese flavors in this donut seemed to be screaming for an easy crumb topping instead!

How to Make Healthier Cherry Gouda Donuts
Step 1: Combine the dry ingredients – the almond flour, coconut flour, baking powder, and salt – together in a large mixing bowl.
Step 2: Beat in the eggs, honey, almond milk, vanilla, and apple cider vinegar. Make the almond butter crumble mixture & stir in the cherries and gouda cheese.
Step 3: Cut off the corner of a plastic bag. Scoop the dough inside the bag to evenly pipe it into the donut molds. Top each of the donuts with the crumble mixture before baking.
Step 4: Bake! Let the donuts cool completely before removing them from the mold.
Optional: drizzle with watermelon seed butter or any other nut or seed butter!

Ingredients
Donuts:
- 1 cup blanched almond flour
- 1/4 cup coconut flour.
- 1 tsp. baking powder
- 1/8 tsp. salt
- 2 eggs
- 1/4 cup unsweetened almond milk
- 2 tbsp. honey
- 2 tsp. vanilla
- 1 tsp. apple cider vinegar
- 1/3 cup diced sweet cherries
- 1/3 cup shredded gouda cheese
Crumble:
- 1/4 cup almond flour
- 1 tbsp. butter, melted
- 1/2 tbsp. almond butter
- 1/4 tsp. vanilla
Instructions
- Preheat the oven to 350F and lightly grease a silicone donut mold with butter or cooking spray.
- In a small dish, prepare the almond butter crumble to top the donuts. Combine all of the crumble ingredients and stir until a crumbly mixture forms and set aside.
- In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Stir well.
- Beat in the eggs, honey, almond milk, vanilla, and apple cider vinegar with an electric mixer until well combined with the flour mixture.
- Stir in the diced cherries and shredded gouda.
- Cut off the corner of a plastic bag or use a piping bag. Fill the bag with the donut batter and evenly pipe the batter into the donut mold.
- Top each donut with some of the crumble mixture before baking.
- Bake for 15 minutes. Let the donuts cool completely before removing them from the mold.
Notes
Optional: drizzle the donuts with unsweetened watermelon seed butter or any other nut/seed butter!
