My version of coconut rice! Hint: it involves lots of veggies & a hint of salty cheesiness. YUM. And it’s still as creamy & coconutty as the “real deal”!

The best part: all it takes is 5 simple ingredients!

The Easiest Creamy Cauliflower Rice

This cauliflower rice is absolutely incredible with baked salmon, shrimp, or flakey white fish! It’s also just a really delicious summery side dish to whip up last minute whenever I need something super fast.

I like to use frozen cauliflower rice since it’s so easy and convenient to always have stashed in the freezer. Fresh cauliflower rice works just as well though! Because I live by myself for most of the year, I really love having frozen veggies (including riced cauliflower) on hand that I know won’t go bad before I can eat it.

For this recipe, I like using goat milk gouda cheese, but regular gouda works just as well. Gouda cheese is considered “legal” on the specific carbohydrate diet so either option works if you’re on the SCD as well!

Goat milk cheese is higher in healthy medium-chain fatty acids and minerals and lower in lactose than cow’s milk cheese. So I would definitely recommend giving it a try if you’re sensitive to milk or lactose!

How to Make Cheesy Coconut Rice

Step 1: Steam the cauliflower rice and assemble the coconut milk, shredded goat milk gouda cheese, and fresh parsley.

Step 2: Add the coconut milk, cheese, and chopped parsley to the cauliflower rice. Cook covered over medium heat for about 5 minutes, until the cheese is melted.

Step 3: Fluff lightly with a fork and serve warm! I like to add more shredded cheese & a sprinkle of parsley to finish.

Description

A creamy, coconutty cauliflower rice recipe finished with gooey goat milk gouda cheese.


Ingredients

Scale
  • 4 cups fresh or frozen cauliflower rice
  • 1/2 cup full-fat coconut milk
  • 1 cup shredded goat milk gouda cheese
  • 2 tbsp. fresh chopped parsely
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Steam the cauliflower rice until slightly tender.
  2. Transfer the rice into a pot with the coconut milk, shredded cheese, parsley, salt, and pepper.
  3. Cook covered over medium heat for about 5 minutes, until the cheese is gooey and melted.
  4. Serve warm!

Notes

I like to finish this dish with a little bit more shredded cheese and fresh parsley before serving!
