This sauce is also just really good to have stored in the fridge to pair with fresh fruit for a fun sweet snack!
One of my most missed foods since I’ve started following the specific carbohydrate diet has been a good caramel. A perfect pairing with crisp apples in the fall or on top a thick banana smoothie in the summer- the caramel opportunities are endless. I really love to drizzle it on top of my fudgy flourless avocado brownies!
How to Make a Healthy Caramel Sauce
Step 1: Combine the coconut oil (or ghee), cashew butter, & honey in a small pot.
Step 2: Heat the pot over medium heat for about 5 minutes, stirring frequently until the coconut oil is melted
Step 3: Turn off the heat and transfer the mixture in the pot to a food processor. Blend on high for about a minute, the sauce should be very smooth and creamy.
Step 4: Eat by the spoon OR drizzle it on top of brownies, apples, cookies… the list goes on!

Ingredients
- 1/4 cup coconut oil (or ghee), melted
- 1/3 cup creamy cashew butter
- 1/3 cup honey
Instructions
- Combine all of the ingredients together in a small stovetop pot.
- Place over medium heat until the coconut oil or ghee is melted.
- Transfer the mixture in the pot into a food processor and blend on high for about 1 minute.
Notes
If the sauce is not being used right away, let it cool completely before transferring it into an air-tight container to store in the refrigerator.
