SCD Butter Pecan Squares

Description

A sweet, slightly crunchy butter pecan flavored snack for the Specific Carbohydrate Diet! Similar to a graham cracker in texture with the best nutty, buttery flavor. SCD, refined-sugar-free, grain-free, gluten-free.


Ingredients

  • 1 1/2 cups pecan flour
  • 2 tbsp. butter, melted
  • 2 tbsp. honey
  • 1 egg
  • 1/2 tsp. sea salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract

Instructions

  1. Preheat the oven to 450F. Lightly grease a 9×9″ pan with non-stick cooking spray and set aside.
  2. Combine all of the ingredients in a large mixing bowl. Stir well until a thick dough forms.
  3. Evenly press the dough into the greased pan. The dough should be about 1/4″ thick.
  4. Bake for 10-12 minutes, until the edges are golden-brown and crispy.
  5. Slice immediately with a sharp knife into about 36 squares. Let the squares cool completely in the pan before removing.
  6. Store leftover squares in the refrigerator for up to 1 week or freeze for up to 6 months.
