Fluffy and delicious grain-free, 5 ingredient waffles… say no more…
These are also totally specific carbohydrate diet friendly and paleo too! Waffles are one of my favorite weekend breakfasts sooo even after starting the SCD to help manage my IBD symptoms, I needed to create a good grain-free waffle recipe.
Healthy Grain-Free Waffles
This recipe idea was born (surprisingly) from a car conversation with my sister… she suggested that I should try cooking my almond butter bread in a waffle maker to see if it cooks faster.
The result: it worked like a charm!
And all it took was 5 simple ingredients and 2 minutes! Who would’ve thought?!
These waffles are also super versatile. They have a light nutty flavor and just a hint of vanilla, making them perfect for sweet AND savory toppings!
A few of my favorites include sliced avocado, fresh fruit, nut butter, honey and chocolate (obviously). Even though chocolate is not “legal” on the specific carbohydrate diet (SCD), I’ve been able to add it back in over time. I just make sure that the chocolate I’m using doesn’t have any inflammatory sweeteners and is as close to 100% dark as possible.
How to Make Almond Butter Waffles
Step 1: Combine all of the ingredients together in a bowl. Beat well with an electric mixer until the batter is smooth (bubbles are normal).
Step 2: pour the batter over a lightly greased, pre-heated Belgian waffle iron. Cook according to the indicator light on the iron, it usually takes about 2-3 minutes. Enjoy warm!

Ingredients
- 1/4 cup creamy salted almond butter
- 1 egg
- 1 tbsp. unsweetened almond milk
- 1/2 tsp. vanilla extract
- 1/2 tsp. baking soda
Optional:
- honey to taste
- cinnamon to taste
Instructions
- Plug in a Belgian style waffle iron to pre-heat.
- Combine all of the ingredients together in a small mixing bowl.
- Beat with an electric mixer until the batter is smooth and creamy.
- Lightly grease the waffle iron and pour all of the batter in.
- Cook according to the indicator light on the waffle iron, it usually takes about 2-3 minutes to cook.
Notes
This recipe makes one large Belgian waffle. If you have a smaller waffle maker, it will make several smaller waffles.
Some of my favorite toppings: honey, mashed berries, nut butter, avocado, and chocolate!
