Bread in 5 minutes?! Ah, the beauty of microwaves. I know microwave-made bread sounds like the least appetizing thing to ever exist… but trust me on this one: it’s a winner!
A Healthy Grain-Free Microwave Bun Recipe!
I seriously make this recipe ALL. THE. TIME. It’s so easy (ready in 5 minutes) & it was so easy to make back in my kitchen-less dorm days of college.
The nutty flavor from the walnut flour almost gives the bun that characteristic “whole wheat” flavor that perfectly compliments a burger. To make it better, these are sturdy enough to hold up to all the toppings & sauces- a true win-win situation!
Since being diagnosed with ulcerative colitis and following the specific carbohydrate diet to help me manage my symptoms, I’ve had to forego wayyy too many burgers & sandwiches… not ideal. But since I’ve perfected this recipe, I plan on saying goodbye to making “burger salads” while everybody else goes for a hamburger bun! This specific carbohydrate diet lifestyle isn’t so bad after all…
How to Use Walnut Flour Sandwich Buns:
Burgers, leftovers, as an easy side to a hearty salad… the options are so endless. I almost feel ridicules including this section to spell it out!
As I mentioned earlier, the subtle nutty flavor can easily be paired with almost any dish. I’ve even made it into French toast by subbing in almond flour for the walnut flour!

It’s also important to note that this recipe only makes one sandwich bun, so be sure to account for that if you’re making these for multiple people!
How to Make SCD Sandwich Buns:
The KEY to the “bun-like” shape is having small microwave-safe glass ramekins on hand! Click here for the ones I use.
Step 1: Combine the dry ingredients in a microwave-safe ramekin, about the size of hamburger bun you’re looking for.
Step 2: stir in the coconut oil, water, and egg whites & microwave for 1 minute.

Description
Quick and easy grain-free hamburger bun recipe. Perfect vessel for burgers, sliders, or sandwiches!
Ingredients
- 3 tbsp. walnut flour (I used Nature’s Eats brand)
- 1/2 tbsp. coconut flour
- 1/4 tsp. baking soda
- pinch of salt
- 2 tbsp hot water
- 1/2 tsp. coconut oil
- 2 tbsp. liquid egg whites
Instructions
- In a small bowl, combine the walnut flour, coconut flour, baking soda, and salt.
- Heat up the water and coconut oil in a small dish (about 35 seconds in the microwave).
- Pour the water/coconut oil mixture into the dry ingredients and add in egg whites.
- Stir until well combined.
- Place in microwave and cook on high for about 1 minute.
- Let it cool for about 5 minutes before turning out of the bowl and slicing.
Notes
- The shape of the bun will take on the shape of the bowl you cook it in! Be sure to use a ramekin that has a similar size and shape to a hamburger bun. Click here for the ones I use!
- Microwave time may vary: I recommend sticking a toothpick into the center to ensure its all the way done!
- I like to throw in some extra seasonings sometimes to take it up a notch. You can get creative with this one!
