Description

Perfect buttery vanilla shortbread paired with a melt-in-your-mouth chocolate shortbread, all in one delicious paleo cookie. These paleo zebra cookies are not only delicious, but they also have a gorgeous striking zebra appearance that make these impossible to pass up! Vanilla Shortbread

  • 1 cup almond flour
  • 3 tbsp. granulated monk fruit
  • 3 tbsp. coconut oil, melted
  • 1 tbsp. water
  • 1/2 tsp. pure vanilla extract
  • 1/8 tsp. sea salt
  • 1/8 tsp. nutmeg

Chocolate Shortbread

  • 3/4 cup almond flour
  • 3 tbsp. cocoa powder
  • 3 tbsp. granulated monk fruit
  • 3 tbsp. coconut oil, melted
  • 1 tbsp. water
  • 1/4 tsp. pure vanilla extract
  • 1/8 tsp. sea salt

Instructions

  1. Combine all of the vanilla shortbread ingredients together in a large food processor. Mix on High for about 45 seconds, until a thick cookie dough forms. Transfer to a bowl, cover, and place in the refrigerator to chill for at least 15 minutes. 
  2. Combine all of the chocolate shortbread ingredients together in a large food processor. Mix on High for about 45 seconds, until a thick cookie dough forms. Transfer to a bowl, cover, and place in the refrigerator to chill for at lease 15 minutes. 
  3. While the dough chills, preheat the oven to 350F. Prepare a cookie sheet by lightly spraying it with coconut oil cooking spray. 
  4. Divide each of the 2 dough mixtures in half. Roll each half of dough into a large rectangle, about 12″ by 3″ in size on top of a sheet of parchment paper.
  5. Stack each rectangle of dough on top of each other, alternating between the vanilla and chocolate shortbread doughs. 
  6. Use the parchment paper to help roll the rectangle of dough into a large sphere so that the chocolate and vanilla cookie doughs adhere together. 
  7. Slice the “tube” of cookie dough into 24 evenly sized cookies about 1/2″ thick with a sharp knife. Place the slices of cookie dough on to the prepared cookie sheet. 
  8. Bake for 10 minutes, until the bottoms are slightly golden-brown. Let the cookies cool completely before removing from the cookie sheet & enjoy!
