These paleo strawberry chocolate chunk blondies are my ideal healthier paleo dessert for Spring! Gooey, sweet paleo blondies riddled with fresh strawberries and decadent dark chocolate are always one of my biggest dessert cravings as the weather warms up.
Paleo Blondies
If you ask me to choose between blondies and brownies, I honestly don’t know if I could. I absolutely adore both desserts. If you aren’t familiar with what a “blondie” is (outside of someone’s hair color of course), I would describe the perfect blondie to be a dense, sweet, buttery square of heaven. Imagine a dense, un-risen vanilla cake type of thing!
Blondies and brownies are both recipes that are actually also very easy to make paleo versions of! I’ve been on a mission to re-create all of my favorite paleo desserts since I started following a paleo-style diet to manage ulcerative colitis inflammation. Since paleo flour alternatives are often on the dense side to begin with, paleo ingredients typically lend themselves very well to substitute in a traditional blondie recipe. Paleo blondies are just as buttery and sweet as “regular” blondies in my option. The best part: it only takes a few simple ingredient swaps!
Baking with Cashew Butter
These cashew butter based blondie recipe is just one of so many incredible paleo dessert recipes that I’ve used cashew butter in. Cashew butter seems to have a slightly sweet, buttery flavor profile that other nut butters don’t really have. While I love almond butter, peanut butter, pecan butter, etc. cashew butter is by far my favorite! It has a lighter color than other paleo nut butters so it makes for really beautiful paleo blondies.
Cashew butter might be controversial in regard to how “paleo” cashews are, but either way I would argue its one of the healthiest “nuts” (or technically a legume, but that’s besides the point). Not only is cashew butter incredible to bake with, but it also has one of the healthiest fatty acid profiles and lowest levels of anti-nutrients compared to other nut butters. Aka if you want to make really great paleo strawberry chocolate chunk blondies, cashew butter is your new best friend.
Strawberry Chocolate Blondies
It’s no secret that strawberries and chocolate are the perfect flavor combo. Naturally, I had to use the duo in my favorite paleo strawberry chocolate chunk blondies!
Freeze-dried strawberries are the key to this recipe. Using a freeze dried strawberries instead of their fresh strawberry counterparts not only gives these paleo strawberry chocolate chunk blondies the perfect texture but I feel like using freeze-dried fruit also has a more concentrated flavor with less water.
Concentrating the strawberry flavor in this recipe is essential so it can stand up to the deep, rich dark chocolate flavor! Chocolate can easily overwhelm the flavor profile of a dessert so strategically balancing out its flavor was essential for this light fruit inspired dessert. Although I will forever and always be a chocolate girl, I love switching it up to fruity blondie recipes occasionally when Spring begins to roll around.

- 8″x8″ Baking Pan
- Creamy Cashew Butter
- Eggs
- Granulated Monk Fruit
- Coconut Oil
- Almond Flour
- Freeze-Dried Strawberries
- Paleo Dark Chocolate Chunks
- Pure Vanilla Extract
- Sea Salt
How to Make Strawberry Chocolate Chunk Blondies
Step 1: Combine the “liquid” ingredients together in a large mixing bowl. Beat well with an electric hand mixer until a smooth, creamy mixture forms.
Step 2: Add in the other ingredients and beat well until cohesive blondie batter forms.
Step 3: Fold in the paleo chocolate chunks and freeze-dried strawberries until evenly distributed. Transfer the blondie batter to the lightly greased 8×8″ pan, using a spatula to smooth the surface of the batter evenly.
Step 4: Bake and let cool completely before slicing into 16 blondies.

Ingredients
- 1 cup creamy cashew butter
- 2 eggs
- 1/2 cup granulated monk fruit sweetener
- 1/4 cup coconut oil, melted
- 1 tsp. pure vanilla extract
- 2.5 tbsp. almond flour
- 2.5 tbsp. coconut flour
- 1/2 tsp. baking soda
- 1/4 tsp. sea salt
- 2/3 cup freeze-dried strawberries, lightly crushed
- 1, 4 oz. paleo 100% dark chocolate bar, chopped
Instructions
- Preheat the oven to 350F and prepare an 8″x8″ baking pan by greasing lightly with coconut oil cooking spray. Set aside.
- In a large mixing bowl, combine the cashew butter, eggs, melted and cooled coconut oil, & vanilla. Beat well with an electric hand mixer until a smooth mixture forms.
- Add the monk fruit sweetener, almond flour, coconut flour, baking soda, and sea salt to the cashew butter mixture and beat again until a cohesive blondie batter forms.
- Fold in the crushed freeze-dried strawberries and dark chocolate chunks.
- Transfer the batter to the prepared baking pan and bake for 15-20 minutes, until the edges are slightly golden brown. Let the blondies cool completely before slicing & enjoy!
