Paleo Strawberries & Cream Pancakes

Description

Perfectly fluffy paleo pancakes riddled with sweet freeze dried strawberries & topped with creamy coconut milk yogurt. Truly the perfect low sugar paleo breakfast recipe! Paleo, Grain-free, Low sugar, Gluten-Free, High Protein.


Ingredients

  • 2 eggs
  • 1/3 cup liquid egg whites
  • 3 tbsp. unsweetened almond milk
  • 2 tbsp. coconut flour
  • 2 tbsp. almond flour
  • 1/2 tbsp. monk fruit sweetener
  • 1/4 cup freeze-dried strawberries, crushed
  • 1/2 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup unsweetened coconut milk yogurt

Instructions

  1. Whisk the eggs, egg whites, almond milk, and vanilla in a small mixing bowl until well combined. 
  2. Add in the almond flour, coconut flour, monk fruit, cinnamon, salt, and baking powder to the egg mixture. Stir well until a smooth pancake batter forms. 
  3. Fold in the crushed freeze dried strawberries. 
  4. Meanwhile, heat a non-stick pan over medium heat. Spray with coconut oil cooking spray and pour about 1/4 cup of pancake batter on to the hot skillet. Cook for 3-4 minutes until small bubbles start to form in the center. Flip and cook for another 2 minutes. 
  5. Top the strawberry pancakes with unsweetened coconut milk yogurt and a drizzle of honey. Serve warm and enjoy!
