Strawberries & Cream Pancakes
The key to making the perfect fluffy strawberries & cream pancakes: using freeze-dried strawberries. While fresh fruit is absolutely delicious in pancakes, it’s very difficult to get a fluffy cake-like pancake consistency. The water content in fresh fruit can easily weigh down pancakes to be a little more dense in texture.
Since these paleo strawberries & cream pancakes are already made with heavier grain-free flours, I was trying to do everything possible to make these strawberries & cream pancakes as cake-like as possible! Freeze-dried strawberries are not only more concentrated in flavor, but they also give these paleo strawberries & cream pancakes a perfect slightly crispy textural element.
For the “cream” part of this paleo pancake recipe, I used an unsweetened coconut milk greek style yogurt to top them off. The crispy strawberries, fluffy pancakes, and creamy paleo friendly coconut milk yogurt are a perfect combination of flavors and textures.
A Healthier Paleo Breakfast Recipe
These strawberries & cream pancakes are easily one of my favorite healthier breakfast recipes to make on weekends. Paleo breakfasts can be pretty self explanatory in the savory department. Steak & eggs, avocado, bacon, fruit salad are all great healthier paleo breakfast options. However, I unfortunately wake up every morning craving something sweet with my coffee!
When it comes to fun sweet paleo breakfast recipes its a little less obvious about what to go for. So I was determined to recreate all of my old childhood favorite breakfasts with healthier paleo ingredients! Naturally, pancakes had to be at the very top of my list.
I used to eat pancakes every single day after high school cross country practice, but when I was diagnosed with ulcerative colitis in college I was forced to completely overhaul my diet. My full story is in this post but in short, this meant no grains, gluten, dairy, soy, refined sugar… pretty much all of the things that runners stereotypically live on! At first, I found absolutely no joy in cooking or eating like I used to. For context, I was a huge foodie literally going to college for a degree in Food Science!
All it took was a little desperation, a pinch of creativity, and a lot of free time from the pandemic to launch me into a recipe testing frenzy! My Specific Carbohydrate Diet friendly paleo banana pancakes were one of the very first recipes on Wholesomely Hannah, and these paleo strawberries & cream pancakes might just have those beat.
The Best Low Sugar Pancakes
Sweet breakfasts are my THING; sugar however is not. Every time I eat a higher sugar breakfast first thing I feel like my hunger cues are very “off” for the rest of the day. Because of that I love creating high protein, low sugar versions of my favorite pancakes, muffins, cinnamon rolls, you name it! Not only are they delicious and super easy to make with just a few simple ingredient swaps, but they also help keep me energized & satisfied for hours.
These low sugar strawberries & cream pancakes are made with monk fruit sweetener, which doesn’t get metabolized like sugar does in our body. Berries also tend to be the type of fruit lower in sugar and higher in fiber, so the freeze dried strawberries don’t even add much in terms of sugar! Even if they did, any type of natural sugar from fruits and vegetables are still a-ok in my book. Your blood sugar won’t spike as much when sugar is paired with a source of fiber or protein, a tip I live by!
The “cream” part of this strawberries & cream pancake breakfast is also low in sugar. I used unsweetened coconut milk yogurt, which is not only a great low sugar substitute but it also happens to be a phenomenal source of probiotics and healthy fats! It also adds the perfect slight sweetness from a subtle coconut flavor!
What You’ll Need:
- Non-stick pan
- Eggs & egg whites
- Almond Flour
- Coconut Flour
- Monk Fruit Sweetener
- Freeze Dried Strawberries
- Cinnamon
- Vanilla Extract
- Sea Salt
- Baking Powder
- Coconut Oil Non-Stick Spray
How to Make Paleo Pancakes
Step 1: Whisk the eggs with the egg whites, almond milk, and vanilla.
Step 2: Add in the dry ingredients (except the strawberries) and stir well until a cohesive pancake batter forms.
Step 3: Add in the freeze-dried strawberries and stir until well combined.
Step 4: Spray the non-stick pan with coconut oil cooking spray. Cook the pancakes over medium heat for 3-4 minutes, until small bubbles begin to form. Flip and cook for another 2 minutes.
Step 5: Top the pancakes with unsweetened coconut milk yogurt, crushed freeze-dried strawberries, and a drizzle of honey. Enjoy warm!

Ingredients
- 2 eggs
- 1/3 cup liquid egg whites
- 3 tbsp. unsweetened almond milk
- 2 tbsp. coconut flour
- 2 tbsp. almond flour
- 1/2 tbsp. monk fruit sweetener
- 1/4 cup freeze-dried strawberries, crushed
- 1/2 tsp. vanilla
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup unsweetened coconut milk yogurt
Instructions
- Whisk the eggs, egg whites, almond milk, and vanilla in a small mixing bowl until well combined.
- Add in the almond flour, coconut flour, monk fruit, cinnamon, salt, and baking powder to the egg mixture. Stir well until a smooth pancake batter forms.
- Fold in the crushed freeze dried strawberries.
- Meanwhile, heat a non-stick pan over medium heat. Spray with coconut oil cooking spray and pour about 1/4 cup of pancake batter on to the hot skillet. Cook for 3-4 minutes until small bubbles start to form in the center. Flip and cook for another 2 minutes.
- Top the strawberry pancakes with unsweetened coconut milk yogurt and a drizzle of honey. Serve warm and enjoy!
