My secret ingredient to the creamiest chocolate cream pie ever: AVOCADO. Leave it to me to turn one of the most popular “health food staples” into a rich chocolatey dessert!

P.S. I pinky promise you can’t even taste it…

A Decadent Paleo Single-Serve Pie!

It’s no secret, I’m a BIG fan of single serve recipes. I always find myself craving something different for dessert every night & I don’t like having a freezer full of leftover treats I feel like I “have to eat”. Especially when I’m living by myself in my college apartment and have limited storage space!

This is one of my favorite desserts to whip up every time I have super ripe avocados on hand that I need to use up. I used them in this recipe to replace the traditional heavy cream or other milk products that are typically used in cream filled pies. Since I’ve started following the Specific Carbohydrate Diet, finding plant based alternatives for creamy milk products has been one of the toughest parts about creating scd-friendly versions of all of my old favorite desserts.

How to Make:

Easy pies are the only kind of pies I have the patience to make & this healthier mini one is no exception. In just 3 easy steps, you have a gourmet dessert!

Step 1: Crust: mix together the blanched almond flour, coconut oil, liquid egg whites, vanilla, & salt. Press into a mini cast iron skillet and bake.

Step 2: Filling: beat together the avocado, almond milk, cocoa powder, honey, and vanilla with an electric mixer.

Step 3: Once the crust is cool, pour the filling mixture into the crust. Loosely cover the pie with aluminum foil and place in the freezer for 30 minutes before serving!

How to Serve:

Don’t get me wrong, this pie is absolutely delicious naked, BUT topping it with my scd-friendly caramel sauce or a big scoop of coconut whipped cream or honey sweetened greek yogurt takes it up a notch!

It’s also super fun to make a whole bunch of these mini pies to share with family or friends! Not having to deal with trying to slice and store a full sized dessert for only one occasion is so convenient.

Description

An easy, decadent chocolate cream pie for one! Made with wholesome ingredients and no refined sugar.


Ingredients

Scale

Crust:

  • 1/4 cup blanched almond flour
  • 1 tsp. coconut flour
  • 1/2 tbsp. coconut oil, melted
  • 1.5 tbsp. liquid egg whites
  • 1/2 tsp. vanilla
  • 1/8 tsp. salt

Filling:

  • 1/2 ripe avocado, mashed
  • 1 tbsp. almond milk
  • 2 tbsp. unsweetened cocoa powder
  • 1/2 tbsp. honey
  • 1/4 tsp. vanilla

Instructions

  1. Preheat the oven to 350F. 
  2. Mix together the crust ingredients in a small bowl with a spoon.
  3. Press the crust mixture into a mini 3.5in. cast iron skillet with your hands.
  4. Bake for 10 minutes.
  5. In another small bowl, beat together the filling ingredients with an electric mixer.
  6. Pour the filling mixture into the baked and cooled crust.
  7. Cover the pie loosely with aluminum foil and store in the freezer for 30 minutes before serving.

Notes

To enhance the rich chocolate flavor of the filling even more, I like to add 1/4 tsp. espresso powder to the avocado filling mixture.

The pie can also be stored in the refrigerator for at least 2 hours instead of placing in the freezer.
