Ingredients
- 1/4 cup almond flour
- 1 tbsp. coconut flour
- 2 tbsp. unflavored collagen peptides (or 1 tbsp. tapioca flour)
- 1 tsp. monk fruit
- 1/2 tsp. baking powder
- 1/4 tsp. dried lemon zest (or 1/2 tsp. fresh lemon zest)
- 1/8 tsp pink salt
- 1 egg
- 1/4 cup water
- 1/2 tsp vanilla extract
- 2 tsp. fresh lemon juice
Instructions
- Combine the almond flour, coconut flour, collagen peptides, monk fruit, baking powder, lemon zest, and salt in a small microwave-safe bowl. Stir well.
- Add in the egg, water, vanilla extract, and lemon juice. Mix until a smooth batter forms.
- Microwave on high for about 2 minutes (microwave times may vary, adjust as needed!).
