A Fun Healthy Breakfast!

This paleo, grain-free breakfast is truly one of my everyday favorites! It only takes 2 minutes to prepare, 2 minutes to make, and only uses up 1 dish in the process. My original SCD microwave muffin recipe was one of the first to go up… for a reason!

Making this microwave muffin for a healthy breakfast became a daily ritual when I was recovering from my very first ulcerative colitis flare two years ago. It was one of the only non-liquid foods that I could stomach at the time. Who would’ve thought I’d still be head-over-heels for it so many years later!

An Easy Almond Flour Recipe!

Almond flour is one of my favorite wheat flour alternatives for grain-free/gluten-free recipes! It’s one of the only 1:1 flour substitutes that can be used in place of traditional flours. Almond flour also has an incredibly neutral taste and color- which lends itself very nicely to a wide variety of recipes.

Almond flour is also my go-to healthier, less-refined flour to use when I’m creating recipes for the Specific Carbohydrate Diet (SCD). I try to follow the SCD closely to help manage my ulcerative colitis & Hoshimotos Disease symptoms. After over 2 years of following the diet with minimal “flares”, I can honestly say it works!

Healthy high-protein, low-carb microwave muffin recipe with collagen

Almond flour is especially great for anyone with IBD or IBS since it doesn’t have the fiberous hard-to-digest almond “skin” that whole almonds do. Almond flour is also incredible at preventing blood sugar spikes that traditional refined wheat flour can have. Crazy sugar highs and crashes are a common inflammation culprit in these days of abundant processed foods. I can honestly say that managing my blood sugar by incorporating more healthy fats and natural, whole-food ingredients in my diet made one of the biggest differences in getting healthy again!

Adding Collagen

I HIGHLY recommend adding the scoop of collagen for texture & nutrition reasons. Not only does adding one scoop of grass-fed beef or marine collagen help give this microwave muffin a fluffier texture, but collagen is one of my favorite gut-healthy supplements I incorporate in my daily routine!

An unflavored collagen peptide powder truly has no impact on the flavor or texture of anything its put in to! I throw a scoop in my coffee everyday, add it to pancake batter, & use it in recipes often. Although it’s not a “complete” protein & our bodies make it naturally, giving myself a little boost everyday has done wonders for my digestion, hair, and nail strength. It also makes recipes more satiating by adding 9 grams of high quality protein to whatever you’re making.

What You’ll Need:

  • Almond Flour
  • Coconut Flour
  • Unflavored Collagen Peptides
  • Monk Fruit
  • Himalayan pink salt

How to Make a Microwave Muffin:

Step 1: Combine all of the dry ingredients in a small microwave-safe bowl & stir well.

Step 2: Add in the egg, water, vanilla, lemon zest, and lemon juice. Mix well until a smooth batter forms.

Step 3: Microwave on high for 2 minutes, add toppings, & enjoy!

Ingredients

Scale
  • 1/4 cup almond flour
  • 1 tbsp. coconut flour
  • 2 tbsp. unflavored collagen peptides (or 1 tbsp. tapioca flour)
  • 1 tsp. monk fruit
  • 1/2 tsp. baking powder
  • 1/4 tsp. dried lemon zest (or 1/2 tsp. fresh lemon zest)
  • 1/8 tsp pink salt
  • 1 egg
  • 1/4 cup water
  • 1/2 tsp vanilla extract
  • 2 tsp. fresh lemon juice

Instructions

  1. Combine the almond flour, coconut flour, collagen peptides, monk fruit, baking powder, lemon zest, and salt in a small microwave-safe bowl. Stir well.
  2. Add in the egg, water, vanilla extract, and lemon juice. Mix until a smooth batter forms.
  3. Microwave on high for about 2 minutes (microwave times may vary, adjust as needed!).
  4. Add toppings & enjoy!
