Description

The BEST sweet and salty paleo cookie cake recipe!! Perfectly moist in the center with golden-brown, caramelized edges. Grain-free, gluten-free, refined-sugar-free, and paleo.

Instructions

  1. Preheat the oven to 350F and prepare the caramel sauce. 
  2. Lightly grease an 8″ cast iron skillet with coconut oil or butter and set aside. 
  3. Combine the almond flour, baking soda, baking powder, and sea salt. Stir well. 
  4. Add in the melted ghee, honey, egg, and vanilla extract. Beat with an electric mixer just until a cookie dough forms. Stir in the chocolate chips. 
  5. Pour about 1/4 cup of the caramel sauce into the cast iron skillet and evenly spread it over the bottom with a spoon. 
  6. Transfer the cookie dough mixer into the skillet, spreading it evenly over the caramel sauce. (Optional) Top the dough with extra chocolate chips and a dash of sea salt. 
  7. Bake for 25 minutes. Let the cookie cake cool completely before slicing.
