Description
A rich and decadent red velvet truffle recipe, made healthier! This grain-free, paleo truffle recipe only takes 5 minutes to make- such a good treat to have stashed in the freezer! Paleo, Grain-free, Gluten-free, Refined-Sugar-Free, Low Carb, Dye-Free.
Ingredients
- 1 1/3 cup almond flour
- 1/4 cup watermelon seed butter (or any nut/seed butter)
- 1/4 cup grass-fed ghee, melted
- 3 tbsp. monk fruit sweetener
- 2 tbsp. unsweetened cocoa powder
- 1 tbsp. beetroot powder
- 1/4 tsp. sea salt
- 1/4 tsp. pure vanilla extract
Instructions
- Combine all of the ingredients in a food processor.
- Pulse on high until a thick, smooth dough forms.
- Using a tablespoon to make evenly sized truffles, scoop out the dough. Roll each truffle lightly between the palms of your hands to smooth the edges.
- (Optional) Roll each truffle in extra beetroot powder or coconut flakes.
- Set the truffles aside on a baking sheet or in sealed containers to freeze for at least 30 minutes. They are best eaten cold!
