Red velvet no-bake truffles, made paleo (of course)! These are one of my absolute favorite healthy treats to have stored in my freezer.
Healthy Red Velvet Truffles!
This healthy red velvet truffle recipe is a winner. No funky synthetic dyes or sugar required so I feel really good about eating one or two as a fun healthy snack or dessert to end the day.
Instead of using a TON (and I mean a ton…) of red food dye, I used beetroot powder instead to get the “red velvety” color for these truffles. Although beetroot powder still has a slight earthy flavor on its own, I promise that you can’t taste it at all in these truffles! In my opinion, it even compliments the flavors of the chocolate and nut butter.
To sum it up, superfoods have become my new food coloring! My favorites include beetroot powder for the purples/reds, Spirulina powder for the blues, and pitaya (aka dragonfruit) powder for pinks!
I like to have these fun powders on hand to spice up typical recipes, but recipes like these red velvet truffles still taste amazing without the beetroot powder. You’ll just wind up with a chocolate truffle since they won’t have that red hue!
A Grain-Free Valentines Day Treat!
Since next weekend is Valentines Day, I definitely had that approaching holiday in mind when I created these! I feel like red velvet desserts are the go-to treat for this holiday- a festive red color meets decadent chocolate. It’s hard not to fall in love with it… or anyone who brings it (lol).
Truffles also just feel like the perfect sophisticated, tiny-but-decadent, treat. They look gorgeous bundled together in a bowl.
They also lend themselves really well to making ahead of time to store in the freezer and pull out whenever you need them. In my opinion, these truffles are even better frozen!
Tips for the Perfect Healthy Truffle:
- Serve frozen! The texture and flavor are amplified a little extra when you eat them cold- trust me!
- These aren’t very sweet, so adjust the amount of monk fruit to your personal preference (or add a squeeze of honey!). We can thank the beets for bringing down the sweet factor- but I’m personally obsessed with dark chocolate so this amount was perfect for me.
- I used grass-fed ghee for this recipe (which is still a point of controversy in a strict “paleo” classified diet) but coconut oil works as well! I follow the Specific Carbohydrate Diet, which is very similar to Paleo, to help manage my IBD symptoms.
How to Make Paleo Red Velvet Truffles
Step 1: Combine all of the ingredients in a food processor and pulse on high until a thick, smooth dough forms.
Step 2: Use a tablespoon to scoop out evenly sized balls of dough. Roll each ball gently between the palms of your hands to smooth out the edges. (Optional) Roll each truffle in more beetroot powder or coconut flakes. Place on a baking sheet and freeze for an hour before serving!

Ingredients
- 1 1/3 cup almond flour
- 1/4 cup watermelon seed butter (or any nut/seed butter)
- 1/4 cup grass-fed ghee, melted
- 3 tbsp. monk fruit sweetener
- 2 tbsp. unsweetened cocoa powder
- 1 tbsp. beetroot powder
- 1/4 tsp. sea salt
- 1/4 tsp. pure vanilla extract
Instructions
- Combine all of the ingredients in a food processor.
- Pulse on high until a thick, smooth dough forms.
- Using a tablespoon to make evenly sized truffles, scoop out the dough. Roll each truffle lightly between the palms of your hands to smooth the edges.
- (Optional) Roll each truffle in extra beetroot powder or coconut flakes.
- Set the truffles aside on a baking sheet or in sealed containers to freeze for at least 30 minutes. They are best eaten cold!
