Homemade Collagen Protein Bars
Protein bars are one of those things that I love to have but hate to buy. Most protein bars on the market are very expensive and it’s extremely difficult to find protein bars that are made with healthy, nourishing ingredients.
I took it upon myself to make my own paleo mocha collagen bars packed with nourishing collagen protein, high-quality ingredients, and the perfect balanced mocha flavor! One of my favorite things about sneaking collagen peptides into recipes is that it doesn’t contribute the off-putting aftertaste or texture that some isolated protein sources can have.
Collagen protein is also extremely easy to digest. Since I started following a paleo-style diet to manage my autoimmune and digestive diseases, collagen peptides have become a pantry staple of mine! I always have my favorite unflavored, grass-fed collagen linked on my Amazon page but I’ve also been able to find collagen in most grocery stores these days.
Healthy Mocha Collagen Bars
I absolutely adore the chocolate/coffee flavor combo that mochas bring to the table. Ordering the Mocha Frappuccino from Starbucks was my gateway coffee-based drink to my current coffee addiction! For that reason, anything mocha flavored not only brings together two of my favorite flavors but also brings but the nostalgia of meeting up with my girlfriends in middle school to walk around the mall with a mocha frappe in hand.
In case you aren’t immersed in the world of coffee terms, a mocha is simply an espresso-based latte with chocolate syrup added to it. Pairing these two bitter ingredients together surprisingly creates the most beautiful balanced flavor profile. Especially paired with steamed milk and the sweetness from the syrup, the chocolate/coffee combo creates the best slightly nutty, rich flavor that makes these paleo mocha collagen bars truly irresistible!
An Easy, Paleo Snack Idea
Although easy, paleo snacks are becoming more popular, its very difficult to find good ones. Working with paleo-approved ingredients is difficult since there really isn’t an extensive paleo recipe repertoire to go off of (yet). I don’t know about you, but my grandma certainly wasn’t teaching me how to bake with almond flour, coconut oil, natural maple syrup, or monk fruit!
With that said, the lack of rules and recipes was one of my favorite parts of the recipe making process! I found it to be so much fun to be able to use my creativity and intuition with these paleo ingredients. In general, paleo ingredients such as nut butter, coconut oil, maple syrup, honey, and unsweetened cacao lend themselves very well to unbaked bars. These paleo mocha collagen bars are truly the best easy, paleo snack idea to make for busy work weeks!
What You’ll Need
- 8.5″x4.5″ loaf tin
- 9-quart food processor
- Parchment Paper
- Unsweetened shredded coconut
- Unflavored Grass-fed collagen
- Monk Fruit
- Unsweetened Cocoa Powder
- Coconut Flour
- Creamy Cashew Butter
- Pure Maple Syrup
- Espresso Powder
- Pure Vanilla Extract
- Sea Salt
- 100% Unsweetened Chocolate Bar
- Coconut oil
How to Make Paleo Collagen Bars
Step 1: Pulse all of the ingredients together (besides the chocolate bar & coconut oil) in a food processor until a cohesive mixture forms. Press the mixture into a loaf tin prepared with parchment paper or non-stick plastic wrap and freeze for at least 1 hour (or chill overnight!)
Step 2: Slice the chilled mixture into 6 paleo mocha collagen bars while still cold.
Step 3: Melt the 100% unsweetened chocolate bar with the coconut oil in the microwave or on a stovetop. Pour about 2 tbsp. of melted chocolate over each sliced bar. Top the melted chocolate with a sprinkle of shredded coconut and sea salt. Chill the bars for another 30 minutes for the melted chocolate coating to harden and enjoy!

The easiest no-bake homemade protein bar recipe with the perfect balanced mocha flavor and packed with nourishing collagen protein! Ingredients
- 1/3 cup unsweetened shredded coconut
- 1/3 cup granulated monk fruit sweetener
- 1/4 cup unflavored grass-fed collagen
- 1/4 cup unsweetened cocoa powder
- 2 tbsp. coconut flour
- 1/3 cup creamy cashew butter
- 3 tbsp. pure maple syrup
- 2 tsp. espresso powder
- 1 tsp. pure vanilla extract
- 1/4 tsp. sea salt
- 50 gram bar of 100% dark chocolate
- 1 tsp. coconut oil
Instructions
- Prepare an 8.5″x4.5″ loaf tin with a sheet of fitted parchment paper (can substitute non-stick plastic wrap)
- Add all of the ingredients, besides the chocolate bar and coconut oil, in a large 9-quart food processor. Pulse on high for about 45 seconds, until a cohesive mixture forms.
- Press the collagen bar mixture into the prepared loaf tin with your hands. Freeze for at least one hour or chill in the refrigerator overnight.
- Remove the chilled mixture from the loaf tin and slice into 6 evenly sized bars while they are still cold.
- Melt the chocolate bar and coconut oil together over the stovetop or in the microwave, stirring frequently until fully melted.
- Carefully pour and spread about 2 tablespoons of melted chocolate over each bar & sprinkle with extra shredded coconut flakes and sea salt. Enjoy!
Notes
Leftover bars can be stored in the freezer for 3 months, or the refrigerator for up to 3 weeks!
