The sweet, fudgy blondie we all know and love… with a coffee shop twist & paleo flare!

Quarantine is finally in its early stages of ending here in Pennsylvania so when I got the text from one of my best friends to come over with dessert, I was ON IT.

I take dessert veryyy seriously. I also take coffee very seriously… why not combine the two?! Alas, java chip blondies were created as a tribute to my first drink I ever got from Starbucks back in elementary school: the java chip frappe. That thing was just SO GOOD.

The Perfect Healthy Paleo Blondie Recipe

I used to make fun of blondies since I’m a veryyy loyal brownie fan, but I have to say that they are quickly growing on me! These also just aren’t any blondies… they’re totally grain-free, gluten-free, vegan, refined-sugar-free, specific carbohydrate diet friendly (if you exclude the chocolate chips), AND paleo.

In other words, if you have a mouth & some almond flour, hopefully you can enjoy these!

These healthier paleo java chip blondies are also almost fool-proof to make! I just mixed together all of the dry ingredients, added in the liquid ingredients, stirred in chocolate chips, and threw it in the oven. Easy desserts have my heart.

If you need to follow the specific carbohydrate diet strictly if you’re in an IBD flare, simply leave out the chocolate chips & you’re good to go! I’ve found that I have been able to add in unsweetened dark chocolate back into my diet after being in ulcerative colitis “remission” for about 4 months now. THANK GOODNESS. I don’t know if I could live a life without chocolate…

How to Make Java Chip Blondies

Step 1: Combine the almond flour, espresso powder, baking soda, and baking powder in a large bowl.

Step 2: Add in the cashew butter, honey, almond milk, apple cider vinegar, and vanilla. Beat well with an electric mixer.

Step 3: Stir in mini dark chocolate chips.

Step 4: Spread the batter into a lightly greased 9×9″ pan. Top with more chocolate chips.

Step 5: Bake for 25 minutes.

Let the pan cool completely before slicing into squares. PRO TIP: use a plastic knife to cut! For some reason, it works so much better than metal knives do to make clean, neat squares.

Description

Sweet & fudgy paleo blondies with a subtle coffee & chocolate flavor. Grain-free, gluten-free, refined-sugar-free, & paleo. 


Ingredients

Scale
  • 2 cups almond flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tbsp. espresso powder
  • 1/3 cup creamy cashew butter
  • 1/4 cup honey
  • 1/4 cup almond milk
  • 1 tsp. vanilla extract
  • 1 tsp. apple cider vinegar
  • 1/3 cup dark chocolate chips
  • (optional) sea salt to garnish

Instructions

  1. Preheat the oven to 350F.
  2. In a large bowl, combine the almond flour, baking soda, baking powder, & espresso powder. Stir well.
  3. Add in the cashew butter, honey, almond milk, vanilla extract, & apple cider vinegar.
  4. Beat well with an electric mixer until a cohesive dough forms. 
  5. Stir in most of the chocolate chips. Put the rest aside. 
  6. Transfer & press the blondie batter into a 9×9″ pan. 
  7. Sprinkle the rest of the chocolate chips & sea salt over the pan.
  8. Bake for 20 minutes. Let cool completely before slicing.

Notes

Vegan option: replace the honey with maple syrup. 

SCD option: leave out the chocolate chips & replace with chopped nuts or fried fruit.

    Do you need the Apple cider vinegar? I really wanna make these, looks fantastic!

      The flavor will be the same without the apple cider vinegar BUT they just won’t rise as much! The acid in the vinegar reacts with the baking powder to make the blondies a little bit fluffy on the edges. I hope this helps!
